1 week healthy eating plan
Hey Guys! Its been a while right? I feel like I say that a lot. Sorry! I took time off over Christmas. Anyway, I am starting the new year with a 1 week health eating plan.
This is what my family are eating over the next week. I am following a vegetarian menu so am basically eating soup and roasted veggies, I will try to put something together to show you what I will be eating but just to warn you, its kinda repetitive but really delicious!
Happy New Year guys. Can you believe its 2018?! That year just flew by. I thought I would put a quick list together to go through some healthy eating recipe inspiration to kick off the new year. Why today? To be honest, in my mind I always think that people aren’t ready on the 1st January!
So these are the recipes I will be making for my family over the next week. Meal prep is such a faff sometimes but totally worth it. It makes life so much easier throughout the week. This week I haven’t meal prepped and am making food every day instead because my husband likes variety when he is eating healthy so I tend to make him something different for each day. Of course, you could just make one type of breakfast/lunch/dinner for the whole week and that would make life a whole lot easier especially if you meal prep in advance!

Dinner – Sweet Potato and Black Bean Chaat
Breakfast – Chocolate and Egg White Porridge
Dinner – Crispy Cauliflower Salad
Breakfast – Caramelised Pear and Blueberry Oats
Dinner – Thai Red Chicken and Coconut Soup
Breakfast – Date, Matcha and Cacao Energy Balls
Dinner – Cajun Chicken Salad
