I love granola. This fruit, ginger and nut granola is absolutely delicious and so filling. After I had my son, I ate a lot of granola. I also ate copious amounts of chicken soup and sometimes toast. I didn’t really eat much else in those first 2 months after the birth. Mainly because my gran in law was always watching (she is a g and i’m a little bit scared of her) and she has her own theories on what a new mother should or should not eat.
Chilli Paneer with soba noodles is a favourite dish of mine. The soba noodles add a chewy texture and as unusual as it sounds, work really well with paneer. I don’t do tofu and I feel like this is a great replacement. I love that soba noodles can be eaten cold and I also love how quick they are to make but just slightly over cooking them can turn them into a claggy mess so you have 2 option, either have a bowl of ice cold water on hand or cook less then needed and instantly wash under cold water. I love paneer in any form. I love this chilli version, I love it with spinach, I love it in ravioli, i love it with peas, i love it with corn, i love butter paneer, skewered paneer, paneer manchurian..basically i just love paneer. 🙂
I love this Thai Roast Chicken on a bed of Soba Noodles. It is so good! This is another one of those recipes that I made up as i went along. I know that soba noodles aren’t always every ones first choice but I think if you barely cook them, they make a good healthy side with most dishes. The chicken has all the flavours of thai food smothered on to it and I can’t tell you how good it is. You just have to try it.
I love leek and potato soup in brrrrr freezing cold weather. There was a time I just hated soup. I was like, why do you want to eat food you can’t bite? Not even the chunky soups worked for me. All that changed a few years ago, when I had a delicious pasta and chicken soup at a friends house.
