Masala Fish

A simply divine Masala Fish recipe courtesy of my Aunt. This recipe is absolutely packed with flavour. The fish is marinaded and cooked and then added to an incredibly spice infused masala sauce. A ridiculously EASY recipe made using only store cupboard ingredients. 

This is a firm family favourite, along with Chana Dal with ChickenChicken Akni, One Pot Chicken and Rice, Lemon Aloo Tikki.

Stuffed sweet potatoes

If there is one vegetable I have always loved, it would be the humble sweet potato. I like to think I ate it before it was cool. Before all the reports about how great it is for you. We’re talking several years ago. When I was in my teens, I would simply poke holes in it, bake it and have it with whatever my mum had made that day. So good! So naturally i love stuffed sweet potatoes!

What a mouthful! Freekeh and Quinoa with a lemon garlic yoghurt and pomegranate is awesome! I love nutty, chewy, smoky and light freekeh. When i first heard of it, i just thought it was another healthy grain that was being pushed on us and it sounded a bit freaky to me..Sorry i can’t help it! It’s actually pronounced farrik or freekkah. So why the e? It’s like all these silent k’s and p’s and don’t even get me started on the spelling of Leicester (the city i live in) pronounced Lester. Why all the extra letters. SO egged on.
