Ful Medames (Fava Bean stew) is a breakfast that is very popular in the middle east. I tend to make a stewversion and have it as my main meal because it is so delicious and hearty. Ful or Foul (pronounced fool) is a vegan, gluten free stew made up of Fava beans. On a recent trip to Saudi, it was served alongside the usual breads/eggs/fruits at breakfast daily. I have come across many variations of Ful and this version has become very popular in our home. You simply have to try it to understand why!
I know i said i would have this chicken shawarma salad recipe up over the weekend, so i apologise that it is a little late. I promise that it is worth the wait. It is absolutely delicious. This may not be the most authentic shawarma recipe because it isn’t cooked on a rotisserie but i think it works well as a salad. The rotisserie method isn’t alway accessible. I have used all the flavours of a shawarma and baked it in the oven followed by a short blast under the grill. This recipe is for a salad, although of course you could eat it as a sandwich or naanwich ;). If i was making a lamb version, i would use a griddle instead. I have made this with both chicken breast and thighs and would recommend you use thighs but if you are watching what you eat, then breast would be better and it also cooks quicker (Halve the time and keep an eye on it as it can dry out).
There’s a new trend out at the moment and it is everywhere! The craze is for turmeric latte or golden milk. Turmeric also known as Arad/Haldi/Addar is well known for it’s anti inflammatory and antioxidant effects. However because it is difficult to absorb, it is advisable to have it with some black pepper too. Here I have made a healing turmeric tea.
So, this chicken and chickpea curry recipe is one i love. It is my mum’s recipe. I also make this recipe with daal and that is also so delicious. I love daal to be honest. I am making tadka daal today and i’m already dreaming about it.
