Apple Pie Overnight Oats – Oh it’s just another overnight oats recipe! Old news..but lets be real..Overnight oats are your answer to a QUICK, healthy and delicious breakfast on frantic mornings and every once in a while, we all have one of those..please tell me you do too?!

So basically this is how it goes. You start with those old fashioned oats. Then you have an option to toast the oats if you can be bothered..not essential but really nice, you then add a little sweetness, perhaps a pinch of salt. Then you stir in that flavour! Pop the oats into the jars and bobs your uncle. Then all you need to do in the morning is add some milk, some sweetener if you need more and any toppings you desire. Simple,  quick and filling!

On my end, this is how it goes in the morning. I open the fridge and sing TA DAH at the top of my lungs. I grab one of the pre prepared pots of overnight oats, stir it up with some luscious cashew/oat/almond milk and then I have to be honest here, I give it a quick whizz in the microwave.. YES I KNOW THAT IS NOT THE POINT OF OVERNIGHT OATS!! Hear me out..I feel it is necessary, otherwise in my opinion it still feels a little grainy. 

A nutritious breakfast on a busy morning is basically a miracle because some mornings we float around and everything runs so smoothly. So so smoothly. I feel like ‘gurrrrrrrll, you are killllllin it.’ Then the following day, all that smugness is wiped away as we are run around like headless chickens with kids hanging off us, milk on the floor, the kitchen in chaos, clothes scattered across the rug..you know how it goes… So seriously, on those mornings, having this little pot in the fridge is pure convenience.

  • 45 grams Oats
  • 125 ml Milk of your choice
  • 95 grams Greek Yoghurt
  • 1 tbsp Almond Butter
  • 1 tsp Vanilla Extract
  • 1/4 tsp Cinnamon Powder
  • 1 pinch Sea Salt
  • 1 small Apple sliced finely
  • 1 tbsp Maple Syrup


  1. Toast the oats in a dry pan over low heat for 5 - 10 minutes. (This is optional!).

     Combine the Oats, half the milk, yoghurt, almond butter, vanilla extract, cinnamon, sea salt and maple syrup in a small jar and mix using a spoon.

  2. Leave overnight in the fridge.

  3. In the morning, add the remaining milk and apple. 

    I prefer to add the milk and heat for 1 minute in the microwave before adding the apple.
