I have been making baked eggs for a ridiculously long time. I imagine that just about anyone would love them as long as they love eggs. Eggs in cream with spinach? Hello! It would be rude not to like them.
I have a meeting tonight. I go to bed at 8 pm because I wakeup at 4.15 am. The meeting is at 8.30 pm, by which time I imagine I will be a hot mess. Really though there is no other time we could all get together because between us we have several young kids and therefore have to arrange around bed times and work schedules. I am kind of dreading it to be honest.
I work with a charity and I have decided after a lot of deliberation to leave. I am not good at saying awkward things face to face. You know because I’m a socially awkward person. Even a nice conversation is difficult. I do believe it is part of my anxiety. Anyway, I have been thinking about leaving for a while because I don’t feel like I am doing enough for the charity. If I am doing any job, I want to do it justice and give it my all. At the moment, I cannot do that. There are other reasons too but the main reason is time. I have none.
In between blogging, looking after the kids and studying, I don’t have the time nor energy to really help the charity. It breaks my heart to say that because I feel like I am letting people down. It wasn’t an easy decision to make but next year, I will be even busier because my course will be even more full on. I have been told by past students that it is even more intense then a degree. This course is a lot about helping yourself/healing yourself before you can help anyone else and that is exactly what I need to do over the next year. I am so grateful for how far I have come from this time last year, when I was a nervous shaking wreck. Life brings you to your knees but through that, you find strength.
Back to the eggs! I love eggs and if you do too, you need to try this!
- Butter for greasing cups
- 2 eggs
- 25 ml double cream
- A few leaves of thyme
- A few leaves of spinach
- Pinch of salt and pepper
- 2 tbsp grated cheese of your choice
- Preheat the oven to Gas Mark 5.
- Grease a short cup with butter.
- Crack 2 eggs into it being careful not to break the yolks.
- Pour on the cream, add the spinach, thyme, salt and pepper.
- Top with grated cheese on top.
- Place the cup in a deep baking tray and fill the tray with hot water so that it comes halfway up the cup.
- Bake for 10–14 minutes, so that the white is just set.
