Seriously this Cajun inspired Prawn, Grilled Corn, Avocado and Black Bean Salad is my go to salad nowadays. Cajun flavours happen to me amongst my favourite flavours for salads because with the smoky flavour profile of cajun food, you don’t need much else in terms of seasoning. I always always have smoked paprika in my home..if you are a regular reader you already know i’m obsessed.

This Cajun inspired Prawn, Grilled Corn, Avocado and Black Bean Salad seriously making dinner a happy and healthy. It gives me the opportunity to load the plate with loads of veggies which I can then shovel into the kids too.  

I recently learnt that there is a way to thaw prawns that actually makes them juicier.. So basically you thaw the prawns in cold water and add a teaspoon of salt. They absorb the salt and the result is they are juicier when cooked.  The great thing about prawns is that they thaw really quickly and that makes life easier.

In terms of dressing, I use two because why not..a buttermilk one and a coriander and lime one because I love coriander and lime dressing. I absolutely love it! It’s fresh, zesty and a little spicy. The recipe makes a quarter cup of each dressing and it makes the salad so so delicious.

This is a pretty big salad and we literally eat to as a family. Picture the scene..now rethink that and imagine it with 2 very boisterous and loud kids..there you go.

The only real cooking involved here is cooking the prawns in the spices. The rest is all about chopping and mixing. So basically in 20 minutes you are all done. Woo!

Ingredients

Prawns

  • 2 tbsp Oil
  • 700 grams Prawns Deveined/Cleaned
  • 1 tbsp Smoked Paprika
  • 1 tsp Cumin Powder
  • 1/4 tsp Cayenne Pepper
  • 1 tbsp Lemon Juice
  • Salt to taste

Salad

  • 1 head Romaine Lettuce Leaves chopped roughly
  • 200 grams Baby Plum Tomatoes Cut in half or quarters
  • 1 Avocado Sliced Finely
  • 1 400g tin Black Beans drained
  • 1 Corn on the Cob

Buttermilk Dressing

  • 125 ml Yoghurt I use Coconut Yoghurt
  • 1 small Garlic Clove crushed
  • 1/4 tsp Dried Thyme
  • 1 tsp Lemon Juice
  • Salt

Coriander and Lime Dressing

  • 3 tbsp Oil
  • Juice 1 Lime
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Honey
  • 3 tbsp Coriander chopped finely
  • 2 Pickled Jalapeno Slices diced
  • Salt and Pepper

Instructions

Prawns

  1. In a large bowl combine the prawns with all other ingredients apart from the oil.

  2. Add the oil to a large pan over medium high heat. Stir in the prawns and cook for 5 minutes turning once. Remove from the pan and set aside.

Corn

  1. Lightly grill the corn on the cob till slightly browned all over.

Buttermilk Dressing

  1. In a small bowl, combine all the ingredients for the buttermilk dressing and whisk to combine.

Coriander and Lime Dressing

  1. In a small bowl, combine all the ingredients for the coriander and line dressing and whisk to combine.

Assemble

  1. In a large platter, arrange the salad. Then add the prawns and drizzle over the dressings.
