Caramelised shallots, rocket and goats cheese salad

Caramelised shallots, rocket and goats cheese salad uses one of my favourite flavour combinations. Rocket (Arugula), Watercress, goats cheese and sticky sweet onions with a yummy balsamic dressing. I make caramelised onions like this a lot like in this Fig, brie and caramelised onion sandwich. I also use the same recipe to make thick spanish onion rounds, to pop on top of burgers during barbecue season. However you can get similar results using balsamic vinegar with salt and pepper.

Peppery rocket works really well with sweet caramelised onions and the creamy goats cheese.  The dressing is a great match for this salad, because it is tangy and soaks into the cheese and those leaves so perfectly. Yes i know it isn’t the healthiest salad in the world but it’s so good!

Caramelised shallots, rocket and goats cheese salad

Ingredients
Caramelised shallots
  • 200g shallots chopped in half
  • 20g butter
  • 1 tbsp oil
  • 70ml red wine vinegar
  • 40g dark brown sugar
  • Salt and pepper to taste
Salad
  • 80g rocket/aragula
  • 80g watercress
  • 250g goats cheese
Dressing
  • 4 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
Instructions
Caramelised onions
  1. Add butter and oil to a large non stick frying pan, over medium heat.
  2. As soon as the butter has melted, add the brown sugar.
  3. Once it has dissolved slightly, add the shallots in a single layer, top with red wine vinegar and season.
  4. Cover the pan with a lid and allow to cook for 20 - 25 minutes over low heat.
Salad
  1. Arrange the salad leaves and break off the goats cheese across two plates.
Dressing
  1. Combine all the ingredients for the dressing and mix thoroughly.
Assemble
  1. Add the caramelised shallots to the salad plates and top with some dressing.
