It’s winter!!!!!!!!! Which means hot chocolate DUH!  This is my absolute favorite time of year. Except for the cold bit.. However I do love all the warmth and gratitude and fooooood this month.

I have to say what is on my mind..and that is that it’s cold. I mean, really cold. I cannae cope. SO I will use any means to warm myself up. Including really hot food and drinks.

This is such a simple recipe and the cashew milk makes it non dairy but still creamy. Cashew milk is surprisingly easy to make like most nut milks or butters or spreads or nutty things. Sorry, I do get really carried away at times.

It starts with simple ingredients:

  • Maple Syrup
  • Brown Sugar
  • Cocoa Powder
  • Vanilla Extract
  • Pinch of Salt
  • Pinch of Cinnamon

By the way, did you get snow this year? At first I didn’t think we were going to have any snow this year. It rarely snows where I am but always snows where I used to live. I love the snow. To be honest, I love it simply because its magical for the kids. I remember that feeling of waking up and seeing the streets covered in a blanket of snow.

This hot chocolate is smooth, warm (obviously), sweet and creamy. It is a treat for both kids and adults alike and cashew milk is divine. Seriously absolutely divine. Great in coffee and tea too and once you make it you will make it over and over again like someone else around here. Someone who is currently typing.. Dunno who.
