Date Cookies

I adapted these date cookies from the three ingredient peanut butter biscuits in a previous post. I love a quick recipe that tastes good!

Serves: 12 - 15 cookies
 
Ingredients
  • 250g peanut butter
  • 200g dates pitted and blended
  • 1 egg.
Instructions
  1. Preheat oven to gas mark 8.
  2. Line a baking tray with greaseproof paper.
  3. Combine all the ingredients in a small bowl and mix well.
  4. Form the dough into round balls and flatten with a fork.
  5. Place on the tray 2 inches apart.
  6. Bake for 8 – 10 minutes and remove from the oven.

I have given a wide berth to trying any 3 ingredient style recipes. I didn’t really want to try a recipe that in my mind was bound to go wrong. Then i treated it like a fun activity to do with the kids and a magic experiment. If you think about it, why wouldn’t it work? Peanut butter cookies made with 3 magic ingredients: Peanut butter (slightly more then the sugar), sugar (slightly less then the peanut butter) and 1 egg to mash it altogether..sounds like it will work doesn’t it?
