Lightened up Breakfast Banoffee Parfait
Ful Medames (Fava Bean Soup)
Ful Medames (Fava Bean stew) is a breakfast that is very popular in the middle east. I tend to make a soupier version and have it as my main meal because it is so delicious and hearty. Ful or Foul (pronounced fool) is a vegan, gluten free stew made up of Fava beans. On a recent trip to Saudi, it was served alongside the usual breads/eggs/fruits at breakfast daily. I have come across many variations of Ful and this version has become very popular in our home. You simply have to try it to understand why!
Low Carb Frozen Yogurt Bark
This low carb frozen yogurt bark is so easy to make and it is also great to make with kids! Yay! I love to start my morning with yogurt, granola and fruit and this recipe covers all bases! Another reason I love this recipe, it is super duper good for you..and me of course. (Eye rolling at myself right now). More on why it is good for you is shared below.
Oats with baked pineapples
These oats with baked pineapples are my favourite way to have oats. They are just a little bit in front of these Baked banana oats. I love them because they combine flavours I love; honey, lime and pineapple. The chocolate I add to these oats is this lime intense one. It is delicious. These oats make my mornings more bearable on some days! You know those days where you just want to crawl back under the covers but then you realise you can’t… yeah those ones. Also hello? Walnuts! Brain power food. Trust me, on some mornings we all need some of that. I do sometimes add pecans too but most of the time i stick with walnuts.
Avocado Egg Boats with Dukkah
Aah avocado egg boats with dukkah.. aka an awesome breakfast idea. I have seen this idea floating around on Pinterest. The egg and avocado boat idea I mean.
