Chicken and sweetcorn soup
I was never a soup person but all that changed about three years ago. My husband loves soup and we now go through months of having soup every afternoon. Of all the soups i make, this ranks second for him. His first love is this french onion soup. For me, this chicken and sweetcorn soup ranks first. I add a lot of chillies in this soup because that is how i love it. Please feel to reduce the chillies though!
Mexican Jalapeno and Lime Sweetcorn Salad
Being a massive fan of sweetcorn, I naturally love any recipe that has corn in it. However as I have mentioned before, I avoid eating sweetcorn because I can’t be sure if any of it is GMO free after watching GMO:OMG on Netflix. So whilst I haven’t completely cut it out, I rarely eat it now. For that reason when I do eat it, I want it to be really good. This mexican jalapeño and lime sweetcorn salad does the trick.
Chickpea, sweet potato, feta and Quinoa salad
Chickpea, sweet potato, feta and Quinoa salad is a salad that i have often because it doesn’t feel like a salad. That’s a win win situation if you ask me. All the benefits of a salad but without all the calories. I love that is is so hearty, filling and subtly flavoured. Some times i don’t want overpowering, ‘hey look at me’ flavours. Sometimes I want texture, simplicity and fresh flavours. Sometimes I like it when every ingredient sings and stands firm, rather then being forced out of the equation altogether by strong, in your face flavours.
Easy Garlic Lime Chicken
Easy garlic lime chicken is the first dish i ever made for the blog! The photos are a disaster and I have really held back from putting them up but you know what..it doesn’t matter. Growth is everything and this first picture shows that I have come on leaps and bounds even though I am nowhere near where I want to be.
