Gluten Free Oatcakes
These gluten free oatcakes are nothing like cake. (Ok i know that is obvious). They are also nothing like Hobnobs. Everyone loves hobnobs but a moment on the lips, a lifetime on the hips and all that. These are super duper healthy gluten free oat cakes and they taste like they are healthy too. I make them on some sundays and then have them with soup throughout the week. They remind me a bit of the Nairns variety of oat cakes. I have made them savoury because that’s how I like them but feel free to make a sweet version!
Chickpea, Sweet Potato and Halloumi wrap
This chickpea, sweet potato and halloumi wrap is so unbelievably delicious and light. The halloumi is meaty and the chickpeas are slightly crunchy and the sauce adds warmth.

Roast Red Pepper Quinoa with Chickpeas and Potatoes

It paved the way to my sugar free/dairy free/gluten free/everything free detox that came along right after this. I did actually roast the peppers with red onion myself one time but for ease, I think I prefer this method.
