Chicken shawarma Salad
I know i said i would have this chicken shawarma salad recipe up over the weekend, so i apologise that it is a little late. I promise that it is worth the wait. It is absolutely delicious. This may not be the most authentic shawarma recipe because it isn’t cooked on a rotisserie but i think it works well as a salad. The rotisserie method isn’t alway accessible. I have used all the flavours of a shawarma and baked it in the oven followed by a short blast under the grill. This recipe is for a salad, although of course you could eat it as a sandwich or naanwich ;). If i was making a lamb version, i would use a griddle instead. I have made this with both chicken breast and thighs and would recommend you use thighs but if you are watching what you eat, then breast would be better and it also cooks quicker (Halve the time and keep an eye on it as it can dry out).
My little sis is really into Japanese food. She mentioned a few dishes that she really loves to eat, so i began to do some research. As i was reading, i kept seeing something called ‘Nasu Dengaku’ or Miso Aubergine and i had to try it because I just love me some aubergines. I made it a few different ways and then came up with this method. I can just taste it now. Luckily i have some aubergines in the fridge yo. So i’m going to consider making this later on..

As i write this, i am wondering if it’s a good idea to mention that today is one of the hottest days ever and i am sweating my face off. Chickpea, sweet potato, feta and Quinoa salad is a salad that i have often because it doesn’t feel like a salad. That’s a win win situation if you ask me. All the benefits of a salad but without all the calories. I love that is is so hearty, filling and subtly flavoured. Some times i don’t want overpowering, ‘hey look at me’ flavours. Sometimes I want texture, simplicity and fresh flavours. Sometimes I like it when every ingredient sings and stands firm, rather then being forced out of the equation altogether by strong, in your face flavours.
