Ful Medames (Fava Bean Soup)
Ful Medames (Fava Bean stew) is a breakfast that is very popular in the middle east. I tend to make a soupier version and have it as my main meal because it is so delicious and hearty. Ful or Foul (pronounced fool) is a vegan, gluten free stew made up of Fava beans. On a recent trip to Saudi, it was served alongside the usual breads/eggs/fruits at breakfast daily. I have come across many variations of Ful and this version has become very popular in our home. You simply have to try it to understand why!
Chicken and sweetcorn soup
I was never a soup person but all that changed about three years ago. My husband loves soup and we now go through months of having soup every afternoon. Of all the soups i make, this ranks second for him. His first love is this french onion soup. For me, this chicken and sweetcorn soup ranks first. I add a lot of chillies in this soup because that is how i love it. Please feel to reduce the chillies though!
Bok choi and chicken soup
This Bok choi and chicken soup is wonderfully fragrant and light. It is packed full of flavour and is a great recipe for using up leftover vegetables. You can add any vegetables to the mix really – potatoes/leeks/mushrooms etc etc. You could also add noodles to it as i sometimes do.

This here Moong daal soup is a staple meal in my house and a lot of houses of an asian background. Some people cook the moong daal in a pressure cooker. Not me though. See a few years ago I had a very unfortunate accident with a pressure cooker so thanks but no thanks!
