Hassleback Butternut Squash with Mustard and Honey
Yo I LOVE this hassleback butternut squash with mustard and honey! I love butternut squash as it is but this method of cooking really takes it to the next level. It even beats hassle back potatoes. Really. I can honestly say that it is one of the vegetarian meals that I really really look forward to eating.
Hummus – Three quick and easy ways
I love hummus and therefore naturally i love flavoured hummus. I mean it can be a meal on it’s own, can’t it? Sorry I know it’s the healthier way, but I don’t do carrot sticks and hummus. It has to be turkish flat bread or griddled pitta. Give me that over a bag of Doritos and sour cream dip any day. So in this post are my favourite ways to make quick hummus. This is the quick method and therefore I have taken shortcuts but it is still delicious. The great thing about hummus is that it can be spiced up according to your individual taste and that is exactly what I have done here with some very simple additions.
Freekeh and quinoa with lemon garlic yoghurt and pomegranate
What a mouthful! Freekeh and Quinoa with a lemon garlic yoghurt and pomegranate is awesome! I love nutty, chewy, smoky and light freekeh. When i first heard of it, i just thought it was another healthy grain that was being pushed on us and it sounded a bit freaky to me..Sorry i can’t help it! It’s actually pronounced farrik or freekkah. So why the e? It’s like all these silent k’s and p’s and don’t even get me started on the spelling of Leicester (the city i live in) pronounced Lester. Why all the extra letters. SO egged on.
Quick Feta Salad with Paprika Pitta Chips
Quick Feta Salad with Paprika pitta chips is an ideal summer salad. Everyone who has had it so far has become hooked so be warned!
Smashed Sweet Potato with Labneh
I am of the opinion that once you have Labneh, you can become addicted to it. Thats why I put it on everything. This Smashed sweet potato with Labneh is a favourite of mine. I sometimes make my own Labneh but not all the time. Granted it is better to make it yourself every time but I don’t always have the time to wait. You could always use Burrata or Mozzarella instead too and add a little seasoning to it.
My favourite Roast Dinners with Sides
Who doesn’t love a good roast dinner? I know I certainly love to indulge once in a while! So I have rounded up my favourite roast dinners with sides for you guys.
Brussel Sprouts Three Ways
Brussel Sprouts have a terrible reputation but actually I think if you get the method right, they can be pretty good. Also they are pretty good for you so I thought why not share this post for cooking brussel sprouts three ways. Tis the season and all that. My absolute fave has to be the dry fried indian version. My husband doesn’t do brussel sprouts and I would love to lie and say he gobbled these up but no, he just doesn’t like sprouts and that totally didn’t happen. People like what they like. I can’t change his taste buds.
Honey Roast Carrots
Tis the season for roast dinners and these honey roast carrots are delicious and a great side for any roast meal. They would go great with this Lamb Shoulder recipe and these Crunchy Roast Potatoes. The carrots have a little bite to them and then they just melt in the mouth. Doesn’t that sound awesome?
Tamarind and Mustard Seed Potatoes
I love these tamarind and mustard seed potatoes. I could eat them every day. I also don’t think they need anything else with them. This is a recipe my mum used to make all the time. These types of recipes spread really fast within a community and i haven’t a clue where it originates from or if my mum just made it up one day. It’s also a really old recipe.
Spicy Okra Strips
These spicy okra strips are perfect alongside these spicy aubergine slices. They are crispy, spicy and delicious. They are great on their own and great with rice and daal. I will be putting the Daal recipe up soon. I LOVE daal. I especially love it with fried vegetables, rice, some sort of pickle and fried fish.
