Cauliflower Pizza with Chickpeas and Burrata

Heyyyyyy! I hope you are all well! I wanted to drop a quick post whilst my daughter plays with my hair because its been a few days since my last post. Maryam is currently combing it whilst giving me advice about how I should style it (She is 5). She has combed it 5 times in the last 10 minutes. I know she will be back any minute/second now. 

So this Cauliflower Pizza with Chickpeas and Burrata came about because I have previously made a cauliflower base pizza (pics below) and although it was delicious, it wasn’t something I would think about making again.Cauliflower Pizza with Chickpeas and Burrata

So I thought about how I could make it more me. So instead of thinking it as a pizza base and thinking about just pizza toppings, I thought I would think of it more like roast veg and think of what else I could enjoy it with. I incorporated flavours that I liked and I enjoyed it very much. 

Anyhow, moving on from the Cauliflower Pizza with Chickpeas and Burrata! So recently I have been going though a lot of ups and downs with my feelings. By recently I mean in the last couple of weeks. I know that in many cases this is part and parcel of Ramadan (written during Ramadan)  because most people are experiencing a detox. So i started to do a lot of self exploration and thinking about the things that were happening around me and what I needed to learn from those experiences.

It basically led me to writing down exactly what I want from my life. I have done this several times already but this time it was different. So I will be sharing some stuff with you soon around self love and development. I will be tying that in with my studies and so there will be topics covered that include things like sleep, environment and elimination (so glamorous I know). I will be doing a series on each of those things and more and I can’t wait to share it all with you!!!! EEEEEEKKK. I have an updated post about that here.

Anyway guys, I hope you try this recipe especially if you haven’t tried a cauliflower pizza base before. I hope it will be a pleasant surprise!

Cauliflower Pizza with Chickpeas and Burrata

Cauliflower Pizza with Chickpeas and Burrata - Roasted chickpeas and Burrata on a Cauliflower Pizza base makes for a delicious lunch.

  • 1 large Cauliflower
  • 1 Egg
  • 115 grams Mozzarella Grated
  • 25 grams Almond Flour
  • 1/2 tsp Oregano
  • 1/4 tsp Garlic Powder
  • Salt to taste
  • 1/8 tsp Black Pepper


  1. Preheat oven to 190 degrees/Gas Mark 5.

  2. Remove florets from cauliflower and chop into smaller pieces. Process in a food processor. Transfer cauliflower rice onto a prepared baking sheet and bake for 15 mins.

  3. Remove cauliflower rice from the oven, transfer to a bowl lined with a double/triple layered muslin cloth and allow to cool for 5 minutes. Then squeeze the liquid out of cauliflower a few times. 

  4. Increase oven temperature to 230 degrees, Gas Mark 8. 

  5. Combine the egg, oregano, garlic, salt and pepper and whisk together. Stir in the cauliflower, almond flour and cheese.

  6. Linda baking tray with new greaseproof paper. Transfer cauliflower base and flatten into a pizza base.

  7. Bake for 20 minutes and top with your toppings of choice, then bake for an additional 10 minutes. Remove from oven and transfer to wire rack to cool.

Recipe Notes

My Pizza Topping:

Kale with a tiny drizzle of oil and seasoning.

In a separate bowl combine 400g drained Chickpeas with 1 flat tsp Coriander powder, 1 tsp Smoked Paprika, 1 tsp Garlic Powder, Salt and Pepper - add on top of the Kale.

I then added Burrata after it came out of the oven. I get my Burrata from Waitrose and it is AMAZING
