Chicken and Noodle Soup
This Chicken and Noodle Soup is sooooooooooo easy to put together, it would be rude not to make it and this girl ain’t rude. I’m all about dem manners yo. Try not to laugh/roll your eyes. I’m just being silly. I know it looks like there is no liquid in this bowl but I promise there is! I chose the wrong bowl..OOPS.
So I was thinking earlier, you know when you go somewhere and you are apprehensive beforehand..you don’t want to go right? Have you ever been anywhere or is there anywhere you have to go, where you are always treated in a negative way?, you are always waiting for the next dig? you are always made to feel bad?, anything good/bad that comes your way is minimised?, your feelings are dismissed, you don’t feel appreciated?, you are looked down upon? you are always waiting for the next problem to come up? etc etc.. It does not really inspire you to go there often right? We all go through it sometimes but what if we ignore it? What if we choose to think that how people treat us, is not our problem. What if we focus on not reacting to it? It is all about mindset and believe me, if there’s anyone that struggles with that, it is me. So i know it is tough. Believe me when I say that this is the kind of thing that can break you. It is a form of bullying if it continues over a long period of time and if you are not able to use your voice for whatever reason. I am working on getting better at reacting to these things or letting things go over my head but I think a) it comes with experience and b) it depends on your circumstance. What else is going on in your life right now? If you don’t have the energy to deal with it, because you are already drained, it is much harder. Been there. By the way, I am not referring to any current life situation. Alhamdulillah. I feel like I have to clarify.
By the way, I am also pretty bad at setting boundaries and answering and getting my point across. I know. What a catch. People assume that, that is just nonsense because I am so loud but I don’t have them quick answers. I am too analytical for that. Also working on the people pleasing thing I have going on..
Have you read Steve Coveys – The 7 habits of highly effective people? This is the number one one book I would recommend to anyone to read? I would also recommend The 7 habits of highly effective families and The 7 habits of highly effective children (I can’t locate it on Amazon at the moment 🙁 ). I cannot emphasis how good these books are but what I will say, is that every single time I have had an opportunity to speak with a highly successful person/entrepreneur, they will ALWAYS mention these books as part of the books that have influenced them. There are so many others I would recommend! If you want me to talk about them, I can do. I am a book worm and have a mountain of books that I would LOVE to talk about!
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 1 medium carrot, diced
- 1 celery stick, diced
- 1/2 teaspoon thyme
- 1 Rotisserie Chicken shredded (Ready cooked)
- 750ml Chicken Stock
- 300g fresh egg noodles
- Salt and pepper, to taste
- Heat the oil and butter over a low/medium heat in a large pot and add the onion and garlic. Allow to soften for 10 minutes.
- Add the carrots, celery and thyme. Saute for 5 minutes.
- Add the chicken and stock and bring to a boil.
- Turn the heat down and simmer for 5 minutes.
- Turn the heat off and stir in the noodles. Taste and season if required. (The chicken will impart it's own flavour, so check before adding salt in particular).
