Chicken Shawarma Bowl
Healthy Homemade Chicken shawarma bowl – Featuring smoky chicken marinated in a load of middle eastern spices, a dollop of hummus (because I am obsessed and it would be wrong not to), a bed of quinoa, plenty of pickles and some veg! Basically this is a healthy & easy weeknight dinner and it also happens to be perfect for meal prep!
Hello flavour and goodness! This Chicken Shawarma bowl is basically a combination of yummy things all crammed together in a bowl.
- Smoky grilled chicken
- A dollop of hummus
- Quinoa because it is the side that fills you up when you are hungry
- Pickles and Salads because pickles are life and salad adds texture and goodness.
And also it’s kinda pretty. I like pretty food and I feel like i want to make pretty food more then..ok i’m lying. Ugly food is my friend too.
I used chicken breasts because look..i had over indulged the day before and I really needed to be a good girl.
I marinated them for a few hours in a yummy seasoning and then everything came together pretty quickly after that. Marination isn’t necessary if you are short on time.
Re the Hummus – we are lucky enough to live near a middle eastern restaurant and my husbands enormous beaming smile means we don’t always have to buy a mountain of food, if all we want is hummus that day. Of course you can make your own or buy from the supermarket. In terms of making your own, I recently made some the authentic way and OMG. So I’m going to be sharing that recipe with you really soon. Ok I will try.
My shawarma is banging apparently..Who says these things..people younger then me.. that’s who. Anyway this Chicken shawarma bowl has loads of garlic (obvs), cumin, paprika, lemon, honey, cinnamon, ginger, & turmeric etc. I know you will be as obsessed as I am!
Bowl food is my favourite food. Good for the soul..and any bowl recipe has a number of elements but they are always easy to put together.
To use the bowls for meal prepping:
Make the quinoa according to pack instructions but add in stock rather then water.
Marinate the chicken up to a day in advance.
Pre cut your veg and pickles.
Assemble and devour.
It’s pretty simple, I know..
