Cumin and Lemon Fish Meal Prep

Coming up with weeknight dinners can be such a mission. This pan-seared fish is fresh, healthy, and easy to make ahead. 

I’ve been wanting to share this recipe for ages. It is probably the easiest fish recipe ever. It is one of the recipes I make the most because it is so simple to make. I usually make the fish and the kids and I will scoop up a piece and decide how we want to eat it. Obviously here it is served here with Cumin rice and salad and is utterly delicious. 

It never ceases to amaze me how simple recipes can taste so incredible. It has so few ingredients and is so fast to make which is exactly the kind of dish that is perfect for meal prep. I mean who has time? 

The potatoes, rice and salad are also really easy to make too. The cumin rice is made using brown rice and it is fluffy and delicious. The potatoes, oh the potatoes are so yummy, soft on the inside with just enough bite to make them feel substantial enough for a meal. Then there is the salad. Simple and quick to put together and a perfect refreshing complement to the fish, rice and potatoes.

I have not cooked for 10 days. I can’t quite believe it myself! This flu had me knocked out but wow, to not cook is a massive deal for me. By the way,  it is precisely during those times when you are easily able to see who your people are and that is such a blessing. We are lucky enough to have people who love us in our life.

Ingredients

Fish

  • 3 White Fish Fillets Cut in half
  • 4 cloves Garlic crushed
  • 2 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 1 tsp Red Chilli Powder
  • 1/4 tsp Turmeric Powder
  • 1 Lemon Juice of
  • Salt and Pepper
  • 1 tbsp Oil

Potatoes

  • 400 grams Baby Potatoes Washed and cut into 1/2 inch cubes
  • 1 clove Garlic crushed
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1/2 tsp Red Chilli Powder
  • 1/2 Lemon Juice of
  • Salt and Pepper

Rice

  • 1 tsp Cumin Seeds
  • 1 tsp Oil
  • 1/2 Onion diced
  • 2 cups Chicken/Veg Stock or Water
  • 1 cup Brown Rice
  • 1 tsp Salt

Salad

  • 1 small Cucumber cut into 1/2 inch cubes
  • Large Handful Cherry Tomatoes
  • 1/2 small Red Onion sliced finely
  • 1/2 Lemon juice of
  • 1/4 tsp Dried mint
  • Pinch Salt and Pepper

Instructions

Fish

  1. Marinade fish in all the ingredients for the fish, aside from the oil for 30 minutes.

  2. Heat oil in a large non stick pan and add the fish. Cook over medium high heat for 5 minutes each side or until cooked. Then set aside.

Potatoes

  1. Add the potatoes to a medium sized pot and cover with water. Boil for 10 minutes, then strain. Heat a large pan over high heat and add the potatoes, garlic, coriander, cumin, chilli, lemon and salt and pepper. Cook for 5 minutes or until done. 

Rice

  1. Add the cumin seeds to a medium sized pot and heat for a minute then drizzle in the oil. Add the onions and fry until golden brown. 7 - 10 minutes. Pour in the stock/water. Bring to the boil and then add the rice and salt.Place lid on and turn the heat right down to low. Simmer for 15-20 minutes or until rice is tender but still nutty. Remove from heat and set aside. After 10 minutes, fluff with a fork.

Salad

  1. Combine all the ingredients for the salad in a small bowl

Assemble

  1. Divide all the separate elements between 6 meal prep tubs and refrigerate for a week.
