I kinda feel guilty about putting this recipe up. I mean does it really warrant a recipe? Dates with Peanut Butter, Dark Chocolate and Salt is basically a non recipe. Stuffed Dates make the most delicious dessert or snack. They are so simple to make and only require minimal ingredients.

Which wasn’t much because as soon as we began fasting, I had to have them at Iftar. My mum would make all kinds of dates but my fave ones were baked in ghee. TRUST ME! SO GOOD!

Nowadays, I love dates and eat them as often as I can. Obviously even more so during Ramadan. I never refuse them anymore. I was going to make a lame joke here but I held myself back.  

These stuffed dates are very popular in our house. They are easy to prepare and taste delicious. They can be made in advance, frozen and can be added to fruit or cheese platters.

Its pretty straight forward really..

I know that most of you will know already. You just remove the stone and them fill them with peanut butter. Around   one teaspoon works perfectly. My favourite is Pip and Nut. It contains no palm oil and contains no added sugar. You can swap the peanut butter with a different nut butter or even tahini or seed butter.

Which dates are best?

I love using medjool dates because they are quite big, really juicy and sweet. We got these ones from SKT welfare this year and have previously brought them via Penny Appeal and the ones that you see in most South Asian Supermarkets.

What’s great about stuffed dates?

Dates are a healthy source of vitamins, minerals, and fibre. 

The nut butter provides some protein. Eating protein with something sweet like a date, slows slows the rate at which sugar floods into the bloodstream. If sugar hits your bloodstream quickly you feel high and then very quickly low. The slower it hits your bloodstream the less of a rush you get, but also, less of an after slump.

Stuffed dates freeze really well and are amazing straight out of the freezer. Although it isn’t recommended because it isn’t great for your digestion or your teeth.

I often make a batch and freeze on a baking tray until frozen. I then transfer to a zip lock bag and take out as needed.

Ingredients

  • 8 Dates Pitted and slit
  • 8 tsp Peanut Butter
  • 4 pieces Dark chocolate chopped
  • Flaky Salt

Instructions

  1. Add a dollop of peanut butter to each date, along with a piece of chocolate and a sprinkle of salt.
