Easy 30 minute Broccoli Cheese Soup – So one of my friends who lives in America is always talking about the Broccoli Cheddar Soup at Panera. I always thought erm..no not for me thanks dear and then I tried making some and OMG it was so good! If you are ready for soup season and also freezing your toes off, this soup is for you!
Trust me guys, this soup hits the spot perfectly. It does help that the weather is asking for all sort of cosyness at the mo. Made a word up. Mission accomplished for the day.
This Easy 30 minute Broccoli Cheese Soup is so so delicious and probably the easiest recipe ever. It doesn’t take long to make and therefore is perfect for a mid week meal. You can use any stock you like aside from fish, beef and lamb lol so basically just veg or chicken. You can also use bone broth for all the added health benefits for the gut!

So now that i have discovered a love for broccoli cheddar soup or specifically this easy 30 minute Broccoli Cheese Soup, I have been making a lot of it. I mean what’s not to love? It is the perfect October food!
This recipe includes most of the ingredients found in a traditional broccoli cheddar soup, but I used spelt flour instead of plain flour because it’s easier to digest and just works better for me. Regular plain flour is fine too.
It’s a pretty simple recipe, but I can’t tell you just how delicious it is.
BTW Has anyone watched Salt, Fat, Acid, Heat on Netflix yet? What I loved most about the show was that Samin made cooking accessible and approachable. There can be so much arrogance around cooking and that puts people off ever entering the kitchen. Her message was simple..ANYONE can learn to cook. Yes anyone..I really like that message. Some do it more successfully then others because of a variety of factors e.g. patience, practice, focus, resources etc.
She also mentioned how you have to be able to work with a broad outline for a recipe..so if you are making something like an orange cake, that orange can taste different from one day to the next and therefore you have to be able to taste the orange and adjust accordingly. That is usually what makes the difference between something amazing or something that is just a bit blah.
Also..Ingredients are everything. I find that really important with things like salt, tomatoes, chocolate and olive oil.

Easy 30 minute Broccoli Cheese Soup
Easy 30 minute Broccoli Cheese Soup - If you are ready for soup season and also freezing your toes off, this soup is for you!
- 2 tbsp Butter
- 1 Onion diced
- 4 cloves Garlic finely sliced
- 40 grams Flour Plain or Spelt
- 500 ml Veg or Chicken Stock
- 750 ml Milk I use Oatly
- Salt and Pepper
- 500 grams Broccoli chopped into small pieces
- 2 small Carrots Chopped into thin batons
- 200 grams Cheese grated - cheddar or similar
- 25 grams Parmesan Cheese or Grana Padano grated
Melt butter in a large non stick pot. Add the onions. Cook for 2-3 minutes until lightly golden.
Stir in the garlic and cook for a further minute. Then stir in the flour and cook for 2 minutes.
Pour in the stock and milk. Season with salt and pepper. You will need less salt then usual based on the stock - about 1/2 - 3/4 tsp. Bring to the boil, then simmer for 5 minutes.
Add the broccoli and carrots. Simmer for 15 - 20 minutes, blend using a stick blender, then stir in the cheese. Check seasoning and adjust if need be.
