Easy Garlic Lime Chicken
Easy garlic lime chicken is the first dish i ever made for the blog! The photos are a disaster and I have really held back from putting them up but you know what..it doesn’t matter. Growth is everything and this first picture shows that I have come on leaps and bounds even though I am nowhere near where I want to be.
So how are we this morning? I overslept for the first time in a very very long time. Not a great way to start the day, however it doesn’t have to affect the rest of the day. Although..my internet keeps cutting out too. Maybe I should just retreat back to my bed. It’s driving me up the wall. No one likes to work for hours, only to have their work disappear into nothing.
I had some really random dreams last night. I generally do have really weird dreams anyway. If I ever tell anyone abut them, they are quite often amused. Jamie Oliver was hanging about in my dream last night. He was educating children about food. There was a lot more to the dream but I won’t bore you with my random dreams. Don’t want you thinking i’m a weirdo.
I was thinking the other day that when you go healthy, people actually start to believe that you can’t cook traditional food. Even if you have been making it forever. SO weird. They actually believe you only know how to use lemon and red wine vinegar in a salad. Aah well, it’s always nice to surprise people I suppose. That has been a theme all my life. People thinking I am dumb and then suddenly realising that there is a brain and abilities in there somewhere. In fact it’s been a running theme for people to think that of my siblings too. I am so proud of each and everyone of my siblings. They are intelligent, creative and unbelievably talented.
Sometimes I think I get too deep with my blogs. Most food bloggers, in fact pretty much all have really happy, clappy blogs. They either talk about just the recipe (I can’t do that) or talk about just on the surface happy things. I wish I could write like that. 🙁
Anyhow, here is the recipe for that lovely garlic lime chicken.
- 1 lb skinless chicken breast
- 1/2 tsp onion powder
- 2 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Juice of 1 Lime
- Salt and Black Pepper
- 1 tbsp Oil
- 1 tbsp Butter
- In a medium sized bowl, combine all the ingredients apart from the lime juice,oil and butter. Coat the chicken thoroughly.
- Heat butter and olive oil in a large pan over medium heat.
- Add the chicken and cook until golden brown. This will take about 5 minutes per side.
- Add the lime juice and cook 5 minutes. Slice the chicken into strips.
- Serve with rice! Enjoy!
