Easy Italian Inspired Stuffed Chicken Breast
A delicious, quick and easy italian inspired stuffed chicken breast with sun dried tomato paste and herbs. This is the best stuffed chicken breast ever. Juicy and flavourful and no faffing required. Totally looks like a smiling crab..i know.
My favourite thing about this recipe is that it is incredibly versatile and you can switch up the flavours as much as you like. The beauty of this baked stuffed chicken breast recipe is that you can adapt to your own taste using whatever you happen to have in.
I have a real issue with any thing that is too tangy tomatoey. New word alert…I can’t cope with recipes that call for 800g tomatoes unless they are cooked out for hours… and I hate salsa. I just hate that sour taste. So trust me when I say this sun dried tomato paste is awesome and whilst I m fairly new to using it, I really really like it.
My internet has been absolutely unbearably slow today. This is the fourth reboot. So fun. My little boy is home today. He is missing a party at school and everything. He has been really poorly but I reckon he will be back at school tomorrow. We went into hospital on Friday and came out on Saturday. We were literally up all night. We did actually go home once during the night but had to go back in because he was so sick.

All my fellow food bloggers have been ridiculously busy over the last few days. Last week was madness mate. I was all over the shop and my kitchen looked horrendous. I would have done a BTS but erm..no. Maybe I should actually.. to show the reality of food blogging. Most of it is spent washing dishes. LOLS. A delicious, quick and easy italian inspired stuffed chicken breast with sun dried tomato paste and herbs. This is the best stuffed chicken breast ever. Juicy and flavourful and no faffing required.
- 1 tbsp 1 tbsp Dijon Mustard
- 1 tbsp Lemon jJuice
- 1/2 tsp Honey
- 2 tsp Olive Oil
- 2 cloves Garlic crushed
- 1 tsp Oregano dried
- 1/4 tsp Parsley dried
- 1/4 tsp Basil dried
- 1/2 tsp Red Pepper Flakes
- Salt and Pepper to taste
- 2 small Chicken Breasts (150g - 180g each) boneless and skinless
- 110 grams Sun Dried Tomato Paste
- 6 thin slices Mozzarella
- Small handful Basil Leaves
- 1 tbsp Olive Oil
Preheat oven to HGas Mark 4/180 degrees C.
Combine the ingredients for the dressing in a small bowl and whisk together.
Cut a slit into each chicken breast, taking care not to cut all the way though.
Cover the chicken in the dressing (including inside the slit)
Stuff chicken with paste and basil leaves.
Seal with toothpicks diagonally.
Heat oil in ovenproof pan. Add the chicken and cook for 1 1/2 minutes on each side, or until golden.
Transfer pan to the oven and cook for 15 minutes, or until chicken is cooked through.
Drizzle over the juices from the pan and serve!
