Feta and Avocado Salad with red onions, cucumber and tomatoes and a simple dressing- Quick, easy and simple. This delicious salad is great on its own, as a side or as a 'bed' for meats, beans or chickpeas. 

You can add anything to it to make it a complete meal or it works just as wonderfully as a side. I sometimes add Chickpeas, Lamb or Chicken to it. My husband adds Tuna too. 

I can’t continue this post without talking about my lost charger wire. My phone was perfectly happy charging away this morning and now I cannot for the life of me find the wire. I have done laps around the house. I have been up and down countless times and still can’t find it. I have checked my bag. I have checked everywhere. Hmm just remembered to check on the radiators. I tend to leave random things there. Nope..If my husband has accidentally taken it to work…i will be wrapping it around his head. Don’t try this at home folks. I mean, obviously I won’t actually do that because I mean, it would be a weird look and would actually serve no purpose. Maybe I should show my frustration by going quiet and letting him guess what he did wrong instead..because we all know that always works. 100% success rate. Ok then….

Also I slept on an extra pillow last night and now I can’t seem to turn my head/neck. Lesson learnt. I do not need to sleep with my head in the clouds. 

For those of you who are here for the first time, I am in the middle of a mammoth clear out. I have mentioned this several times via posts and my instagram stories already but just in case you missed that, here I am bleating on about it again. Listen, it is doing my head in. Oh i know it is all part of the healing process and it shows progress when you are willing to let things go. Seriously I had some really random stuff laying about. So far we have cleared out one entire rooms worth of boxes and bags crammed full of all kinds of weird and wonderful delights. Upstairs is done and now we are onto downstairs. I am dreading clearing the kitchen out. Today I am tackling my bookshelf. It is rammed from top to bottom and goes the entire length of one wall in my front room. It has on it magazines, books, remote controls, lenses, stamping kit (letters for jewellery), frames and coursework. Yes I have been sent a load of things but regardless, I need to let go of them right about now. I wish I had done giveaways at the time of receiving said things. Maybe next time. You live and you learn. Onwards and Upwards. Dear Future, I am ready. Ok I’m gonna stop now. 

Feta and Avocado Salad

Servings 4

Ingredients

  • 200 grams Cherry or Baby Plum tomatoes Chopped in half
  • 1 Cucumber Deseeded and cut into half moons
  • 1 Avocado Cut into chunks
  • 1/2 Red Onion Sliced Finely
  • Quarter Handful Parsley Leaves Chopped extra finely
  • 100 grams Feta Cheese Crumbled
  • 2 tbsp Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 1 Squeeze Lemon Juice
  • 1 tsp Red Oregano
  • Salt and Pepper

Instructions

  1. Combine the tomatoes, cucumber, avocado, red onion and parsley in a large bowl. 

  2. Whisk together the olive oil, red wine vinegar, lemon juice, oregano and seasoning and pour over salad.

  3. Mix through gently and serve immediately.
