They are now a regular part of my Sunday meal prep..when it happens. I am still so on and off with that! I do one week and then skip 2 weeks. So bad I know. However these are easy enough to put together any time of the week, without too much thought. 

I have always been more into citrus flavours then berry flavours. You know when you were younger and you either went for orange, lemon and lime sweets/drinks or blackberries, blueberry, raspberry, strawberry..well i always went for the former. I love anything citrus flavoured. Therefore I love these little energy bites full of zesty lime and nutty coconut. 

They are perfect at this time of year. Spring is all about refreshingly delicious flavours and light snacks. Also they happen to be vegan friendly, gluten free, dairy free and refined sugar free. 

I love energy bites anyway. All the variety of flavours work for me. I experiment with them ALL the time. I’m also all about the convenience of packing snacks for when we are on the go. Kids get hungry pretty quick when out and about, so to reach in to my bag like a hero and hand them a delicious and healthy snack makes me feel like wonder woman. OK..Maybe I am over exaggerating just a little but I love to be able to have a ‘here’s one I made earlier’ solution to the ‘mummmmmm I’m tired, my feet hurt, i want a snack..’ I know all the mothers are hearing me right now. BTW I hope anyone who celebrates, had a wonderful Mothers Day yesterday. I am pretty sure it was in America only but a lot of Brits celebrated too! 

Anyway, I do hope u try these tropical bites of bliss and I hope you love them! 

Tropical Lime and Coconut Bites

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 15-20


  • 100g Almonds
  • 25g Cashews
  • 265g Medjool dates pitted
  • Juice of 3 small Limes
  • 1 tsp Vanilla Extract
  • 90g Desiccated Coconut


  1. Pop the almonds and cashews into a blender and pulse.
  2. Add the dates, lime juice, vanilla and blend until the mixture clumps together.
  3. Form small round balls using your palms and roll in the dedicated coconut.


Will keep in the fridge for a week.
