Gluten Free Sundried Tomato Spaghetti

So I have been eating gluten free pasta for some time but I have struggled to find a gluten free brand of spaghetti that works well with becoming a laggy stuck together mess. This Barilla pasta solved that problem.

Obviously pasta is a favourite for most people (I mean who doesn’t love pasta?) Being a pasta and spaghetti lover,  I was pretty excited to try this GF Pasta out. If you guys have yet to try Barilla GF Pasta, I highly recommend it. This pasta doesn’t mean that you have to compromise on flavour or texture. Once I tried this pasta, I knew I wanted to use it to make a sun dried pasta recipe.

This recipe is actually pretty healthy and flavourful. It is also as usually a quick and easy recipe and therefore ideal for week days.  What I love about the sun dried tomatoes her is that they give the illusion of a really slow cooked sauce. You know those ones that you cook out all day?  Yep that is what this tastes like but without all the hours slaving over the stove!

To make the sauce I used some of my favourite ingredients: spaghetti!, olive oil, onion, garlic, basil, oregano, salt and pepper and sun dried tomatoes. Put everything together and you have the most delicious bowl of pasta. I topped my spaghetti with a little parmesan because duh..and I still consider it pretty guilt free. See recently I have been practicing having a little of what I fancy without all the added guilt. I mean, most foods in corpious amounts aren’t great for us. SO a little of what I fancy is OK!

Gluten Free Sundried Tomato Spaghetti

Ingredients

  • 1 Onion Peeled and diced
  • 4-6 cloves Garlic Crushed
  • 1 tbsp Dried Basil
  • 1 tbsp Dried Oregano
  • 190 g Sundried Tomato Paste
  • 2 tbsp Tomato Puree
  • 500 grams Gluten Free Barilla Spaghetti
  • 2 Handfuls Spinach
  • Mozzarella and grated Parmesan for serving

Instructions

  1. Heat the oil in a large non stick pot over medium high heat and add the onion and garlic. Cook for 10 minutes until the onions are golden brown.

  2. Stir in the oregano, basil and salt and pepper, cook for a further minute.

  3. Stir in the tomatoes and puree and cook over a low heat for 10 - 15 minutes. 

  4. Boil spaghetti according to pack instructions and add to the tomato mixture with 3 tbsp of the cooking liquid. Add the spinach and mix it all together.

  5. Divide between bowls and swerve with a little parmesan and mozzarella.
