Healthy oat and coconut energy biscuits

These healthy oat and coconut energy biscuits are a delight. They are also gluten free, dairy free, refined sugar free and suitable for a vegan and paleo diet. I know. They are genius. They are loosely based on an Anzac biscuit recipe but they are not as flat and perfectly formed because I find that coconut flour doesn’t work like that, unless it is blended with another flour! Usually when I use coconut flour, i mix it with another flour, like for example tapioca flour.

An Anzac biscuit would usually contain flour, oats, desiccated coconut, sugar, butter, golden syrup, bicarbonate of soda/baking soda and boiling water. In this recipe all that exciting stuff is replaced with healthier stuff and i promise you, it tastes sooooo good! Just try it!

I have had one of those days today where I keep dropping stuff. Also known as a dopy day. My family would say, I can be clumsy. (Whatever Trevor). It only happens when there are loads of people around. I just love to make sure people don’t forget me, so I randomly drop things around them to make sure I remain in their minds for a long time.

A couple of months ago I went to a house to pay my respects to a family who had suffered a bereavement. As I was leaving, I decided to fall on my face. #Awkward The whole family was there. I got up red faced and instantly tripped again. What is my problem?! The more I over thought it, the worse it got. In my mind, I was thinking they probably just want me to go so they can get back inside. I could practically hear them saying, ‘just get up woman and LEAVE!’ Aah well, I probably took their mind off things for a little while. What I should have done before I went, is made these healthy oat and coconut energy biscuits and popped half a dozen in my gob. Anyway, just so you never fall over your feet, here is the recipe for you. 🙂

Healthy oat and coconut energy biscuits

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 20 - 25


  • 80g coconut flour
  • 100g rolled oats (Gluten free)
  • 60g desiccated coconut
  • 60g coconut sugar
  • 1 tbsp maple syrup
  • 1 tbsp date syrup (or use maple syrup if you don't have date syrup)
  • 80g coconut oil
  • 1/2 tsp bicarbonate of soda
  • 1 tsp boiling/hot water


  1. Preheat oven to gas mark 3.
  2. Line 2 large baking trays with greaseproof paper.
  3. Combine the flour, oats, desiccated coconut and sugar in a medium/large bowl.
  4. Using a wooden spoon, stir in the maple syrup and coconut oil until everything is well combined.
  5. In a small cup combine the bicarbonate of soda and water and mix together.
  6. Pour into the oat/coconut mixture.
  7. Use a small ice cream scoop to put the mixture onto the lined trays and press down slightly. Space the biscuits apart by at least 5cm.
  8. Bake for ten minutes.


Oats are generally gluten free but can be contaminated in the same places as products containing gluten therefore it is better to buy gluten free. I would recommend the Bob's Red Mill variety.
