 As far as ice creams go, cookie dough ice cream is one of my favourites. How about you? What’s your flavour? Tell me, whats your flavour? (Sorry.. Craig David took over a little bit there). Salted Caramel is also right up there. To combine both would be awesome right? So I did just that. Salted caramel ice cream sandwiched between two no bake cookie dough biscuits was the perfect solution to my craving and I enjoyed every last bite of it.

I just want to add, these ice cream sandwiches are so so easy to make. They keep the kids happy and the dough can be multiplied to make mass quantities. Cookie dough makes people happy. You should always multiply cookie dough. It just makes sense.

Eat them straight out of the freezer whilst the cookie dough is firm and the ice cream is not dripping all over your hands. This ice cream is divine by the way and ridiculously low in calories and sugar. You get all the flavour with this recipe, minus the calories. That is why I love it so much.

Every time I make cookie dough, I always eat some of the dough. Doesn’t everyone? 

Generally, cookie dough ice cream sandwiches are usually full of sugar and are not a healthy dessert option. These are healthy. I know I am repeating myself but I can’t believe it! Also these babies are great for stress relief. Trust me. They are Summer in a dessert. Clearly and eventually the ice cream is meant to melt down your hands, especially if the kids are eating it. They always forget that ice cream melts and will get messy.
