Homemade Jerk Seasoning

OK let’s talk about homemade jerk seasoning. I love jerk chicken with rice and peas but when I last made it, my picture was a DISASTER bruv. An updated pic will be coming soon.

I also met a Caribbean lady who said she never makes hers with coconut milk because some people don’t like it like that. (I do! I LOVE it). The first meal I had with my husband was Jerk chicken..I then recreated it at home. Shortly followed by making it for my in laws where my sister in law came and bit into a Scotch Bonnet Pepper very casually..We then watched her turn into a tomato and drink copious amounts of water.

Then something weird happened. People kept buying me Jerk Seasoning. It was the oddest thing ever. Mind you, at that time I didn’t make my own so it was appreciated to a degree. However when I had more tubs/bottles and jars then I knew what to do with, I had to start politely declining.

There is a word that springs to mind here. I used to have a elderly colleague who would say ‘bloominerries’. A completely made up word. Although we worked together about 8 years ago, I still use it now. She used to say it every time she was a tiny bit..shall we say distressed. I think it was a posher way of saying ‘what the heck’ or something along those lines. I shan’t elaborate. So basically I would be saying in the above situation. ‘I’ve got loads of jerk seasoning now. Thanks. Bloominerries. You must think I eat nothing but jerk chicken.’ Now that i have put it into context, it all makes sense. I KNOW. I sometimes wonder if my humour comes across in these posts or do I just come across as a completely random weirdo? Hmm, I apologise if its’s the latter.

Anyway, onto that recipe!
