Hot chicken wings

There are so many ways to make chicken wings and these hot chicken wings are delicious. I feel like i should dedicate an entire tab to wings on the blog. You can have sticky, buffalo, crumbed, tandoori, buttermilk, KFC, ginger and honey, coca cola, barbecue and the list goes on..\

My husband loves these hot chicken wings. By love, i mean i can put a pile in front of him and turn my head for a minute and then hear a lot of activity – pulling, breaking, slurping, only to turn back to an empty plate/tray. The day i made these, there were two trays. One crumbed version too. Let me tell you, it is the quickest i have ever seen him move. He doesn’t need Red Bull. Chicken wings give him wings. He especially likes to eat them when the football is on.

These hot chicken wings sit proudly amongst all the other varieties. There are a few ways to cook wings too, in the oven, in the oven followed by the grill, on a barbecue, in a pan, in a pan with a quick blast under the grill. I always think about what i want my wings to taste like before i consider the method i use.

In the UK, barbecue season is very short so that is usually not an option. However my husband comes from a family of barbecue enthusiasts. Over the course of my life, i have been to so many barbecues. Some have been really bad and some have been really good. Two of the best ones have been with my in laws. Having not understood what all the hype was, last year i got into the whole barbecue vibe. I mean have you watched braai master? Enough said.

By the way when i talk about my husband, i can be very sarcastic and i do tease him. Believe me, it’s a two way street. Sometimes people don’t get it. They can’t see that we are only having a laugh. Someone once said to me, ‘OMG you’re sarcastic with your kids too.’ Yes, i am. Not all the time. That’s who i am. I can’t somehow switch that off. I tone it down with my kids but i am still myself with them, like my mum was with us. My mum is so funny and so sarcastic and my nan was the same. Over the years, i have become aware that it isn’t always well received or understood and i kinda get that, so i definitely tone it down in large gatherings.

Hot chicken wings - www.tiffinandteaofficial.comAnyway back to these hot wings, do give them a try. They do benefit from marinading and so i would recommend that they are marinaded for at least one hour and popped into the fridge.

Delicious hot chicken wings
Ingredients
  • 2lb chicken wings cleaned and patted dry
  • 2 tbsp light brown sugar
  • 2 tbsp garlic powder
  • 3 tbsp hot sauce (I use Sriracha)
  • 2½ tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar (or white vinegar)
  • Salt and pepper to taste
  • 2 tbsp oil (I use sesame)
  • 1 tbsp butter
Instructions
  1. In a large bowl, mix together the sugar, garlic, hot sauce, honey, soy sauce, rice wine vinegar and salt and pepper. (I only added a pinch of salt but i added 1 tsp pepper).
  2. Add the chicken wings and combine.
  3. Marinate in the fridge for 1 hour.
  4. Remove the wings from the marinade and reserve any leftover marinade.
  5. Heat some (about 1 tbsp) oil in a large nonstick pan over medium to high heat. Add the chicken wings, cover and cook, flipping every once in a while till cooked through. (This takes about 12-15 minutes).
  6. Remove the lid, add the remaining marinade, butter and leftover oil and turn the heat up to reduce the sauce.
  7. Heat the grill, and put some foil on the bottom of the grill. Add a metal rack on top of the foil, oil it a little and pop the wings on the rack (If you already have a grill tray the foil can go under the metal rack in the tray instead.
  8. Cook for about 3 minutes until the wings brown a little. (Keep an eye on them)!
  9. Serve immediately with either chips or rice. YUMMY!
