Indian Chicken, Cumin Rice and Masala Potatoes Meal Prep

In every Meal prep post I go through this thing where I tell you what meal prep is. . I don’t know why I do it. I just have to so here goes..sorry in advance. In essence meal prep is making food ahead of time so that allllll that food is ready for you during the week. 

I also do another thing in meal prep posts. That is RAVING about how awesome these glass containers are. These little divided glass containers are my absolute favorite new addition to our food storage collection at home. They are not essential but they are pretty. 

So where have we been? No where is the answer. I have been at home and in bed with the Aussie flu. It basically took over my life and then my kids lives and obviously as an extension, my husbands life too. I read somewhere that if you don’t know whether you have the Aussie flu or not, an indication would be if you were skint and somebody came and put £20k next to your bed, you would not move. Yes.. that is pretty much it because you absolutely cannot move and have no desire to. So when I hear people saying that they are still going to work through Aussie flu and ‘soldiering on’, I know that they definitely do not have Aussie Flu. Aussie Flu cripples you and renders you useless for days in a row. During Aussie Flu time, we were lucky enough to receive a little something from a company..GIANT JENGA! As a family we already LOVE Jenga, so when that arrived, I would have normally screamed the house down and demanded we all play a game immediately. Instead I rolled over and fell asleep, as did my kids. Now I know they are better because well A) they are at school and B) they won’t stop going on about the Jenga.

Indian Chicken, Cumin Rice and Masala Potatoes Meal Prep

Ingredients

Chicken

  • 2 lb Chicken Breast
  • 4 cloves Garlic crushed
  • 1 inch Ginger crushed/grated finely
  • 1 tsp Red Chilli Powder
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 1/4 tsp Turmeric Powder
  • 1/2 Lemon Juice
  • Salt and Pepper
  • 1 tbsp Olive Oil

Potatoes

  • 400 grams Baby Potatoes Washed and cut into 1/2 inch cubes
  • 1 clove Garlic Crushed
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1/2 tsp Red Chilli Powder
  • Salt and Pepper
  • 1/2 Lemon Juice of

Brown Rice

  • 1 tsp Cumin Seeds
  • 1 tsp Oil
  • 1/2 Onion diced
  • 2 cups Chicken/Veg Stock/Water
  • 1 cup Brown Rice
  • 1 tsp Salt

Instructions

Chicken

  1. Marinade the chicken in all the ingredients except the oil for 30 minutes.

  2. Heat oil in large non stick pan over high heat. Add the chicken and cook for 3 - 5 minutes each side or until cooked. Remove from pan and set aside.

Potatoes

  1. Add the potatoes to a medium sized pot and cover with water. Boil for 10 minutes, then strain.

  2. Heat a large pan over high heat and add the potatoes, garlic, coriander, cumin, chilli, lemon and salt and pepper. Cook for 5 minutes or until done. 

Rice

  1. Add the cumin seeds to a medium sized pot and heat for a minute then drizzle in the oil.

  2. Add the onions and fry until golden brown. 7 - 10 minutes.

  3. Pour in the stock/water. Bring to the boil and then add the rice and salt.

  4. Place lid on and turn the heat right down to low. Simmer for 15-20 minutes or until rice is tender but still nutty. Remove from heat and set aside. After 10 minutes, fluff with a fork.

Assemble

  1. Divide all the separate elements between 6 meal prep tubs and refrigerate for a week.
