Indian Creamy Cashew Chicken Curry

This indian creamy cashew chicken curry is silky smooth and full of flavour. I love it! It is great with rice or roti/naan. Shall we talk about brown rice? For a long time, i have avoided brown rice. Why is it so gritty and notoriously awkward to make? This weekend, I finally came up with a formula that works. Ok I didn’t. I adapted a recipe I found online. At the moment, I am eating brown rice and avoiding white rice. I can’t tell you just how filling it is! It’s funny how quickly your tastebuds adapt. From enjoying super sweet food for the last few years, I am now actually not that interested in it. Not even Nutella is of interest to me!

The other thing is, i have cut down on dairy and gluten for some time now. Last week for just two days, I indulged more then I should have. Next thing you know, Hello three zits and exhaustion. I was like wow, that didn’t take much. There was a time when people used to ask me about my skincare routine. It was literally none existent. I have never been the kind to care. Until now. When it suddenly went so wrong. You know they say, you don’t appreciate something until you no longer have it. Yep! It’s true! Having never been used to getting spots, I have now had a year of skin breakouts and that is one of the reasons (albeit a very small part) of why I embarked upon this holistic healing journey. As i said, I will be keeping you updated on that little journey and talking to you about some of my health issues and how this journey is helping me get back in control.

I have just returned from the school run. Some days, it goes so smoothly. Some days, I come home and breathe into a paper bag. It’s absolute chaos on the roads, in the playground, inside the nursery/school. It’a like WOAH! It’s too early in the morning for this! I am not ready for this.

Anyway, about that chicken. Honestly, I rarely make this. I have it as a treat once in a while and i savour every last bite. I hope you will too! Enjoy guys! 🙂

Indian Creamy Cashew Chicken Curry

Prep Time: 45 minutes

Cook Time: 35 minutes

Total Time: 1 hour, 20 minutes

Yield: 4


  • 1 tsp Red Chilli powder
  • 1 tsp Coriander powder
  • 1/2 tsp Cumin powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Salt
  • 1 tbsp Natural Yoghurt
  • 450g or 1lb Skinless Chicken Breast or Boneless Thighs cleaned and cubed
  • Cashew Sauce
  • 50g Cashew Nuts
  • 100 ml Milk
  • Curry Sauce
  • 2 tbsp Oil
  • 2 medium Onions diced
  • 1 tbsp Tomato Puree
  • 2 large Tomatoes
  • 4 cloves Garlic crushed (Reduce if you prefer less)
  • 1 tsp Red Chilli powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 1 1/2 tsp Garam Masala powder
  • 2 cups Water
  • 1 tbsp Sultanas
  • 2 tbsp Coriander leaves chopped


  1. Marinate the meat in chilli powder, cumin powder, turmeric powder, coriander powder, salt, and yoghurt for 30 - 40 minutes.
  2. Cashews
  3. Soak the cashews in the milk for 10 minutes, then process in a food processor till smooth. Add a little more milk if required.
  4. Curry
  5. In a non stick pan, add the oil and onion and allow to cook over a medium heat for 7 - 10 minutes or until golden brown.
  6. Add the tomato and tomato puree. Allow to cool and transfer to a food processor or hand blend till smooth.
  7. Re add to the same pan over a low heat and add the garlic, red chilli, cumin, coriander, turmeric and garam masala powder. Stir and cook over a low heat for 5 minutes.
  8. Add the water, then add the chicken, cashews, half the coriander and sultanas and fry for a minute.
  9. Turn the heat right down, cover the pan and cook fro 10 - 15 minutes.
  10. Once the sauce has thickened. check that the chicken has cooked through and turn the gas off.
  11. Top with the remaining coriander.
  12. Serve with rice or roti/naan.
