Kale Pesto Pasta with Vegetables
It took me a really long time to get used to kale. I couldn’t handle the smell or understand the hype and whilst I am still to be converted to eating it raw or baked into crisps, I love it in pesto.
This is basically a delicious pile of pasta slathered in a kale pesto. A recipe that requires very few ingredients and not much drama.

This pasta makes the perfect weeknight dinner in my experience and its always a good sign when there are clear plates and silence around the ‘table’. We don’t eat on a table but lets imagine that we do.
I make this Kale Pasta using whole wheat pasta because nutty whole wheat pasta and earthy kale should work right? I know how it sounds. It sounds like a dry, boring meal. It isn’t though especially when paired with garlic, parmesan, pine nuts and lemon.
The majority of our readers love regular supermarkets and like real food. Kale has now become real normal food in my opinion. The pesto is whizzed together in 5 minutes or under.
