Kardashian Chicken Salad (Health Nut CopyCat)

So I was asked by one of my lovely readers to recreate the famous Kardashian Salad which I believe they eat regularly on their show – Keeping up with the Kardashians. I have never watched it myself because it isn’t really my thing. That isn’t to say I don’t watch really embarrassing reality tv once in a while (Im talking Made In Chelsea here) but the Kardashians has never really been my thing. Of course I have seen them around and heard them in interviews. I mean who can escape them? Anyone? Nah I didn’t think so.

So naturally I had to do a bit of research. ‘So i went right ahead’ (imitation is the highest form of flattery donchaknow) and saw that both Glamour and People Mag have recreated the salad and my version of that recipe is the one you see here.

Mine is an adapted version and here is what I did differently:

I didn’t shred the chicken and I don’t have a reason for that really. I know that shredding the chicken gets everything nice and juicy but it was already really juicy anyway I guess..

I couldn’t find any sprouts so i left them out

I added olives because my husband loves them

I did a quick pickled ginger and they don’t have that in this version of the salad

I added a little Grana Padano or Parmesan over the top

I used mixed seeds rather then just sunflower seeds and roasted them very briefly in a dry pan first

and…I added mini cucumbers because they are so cute and crunchy.

It was absolutely delicious and a salad that I think I can imagine eating every day. My husband also agreed with that. I made a quick and easy basic italian dressing to go with the salad and it was just so so good. That.is.all.
