KFC Baked Oven Fried Chicken
KFC Baked Oven Fried Chicken – A copycat version of the KFC chicken made slightly healthier by baking in the oven rather then deep frying.
A couple of years ago I had a copycat recipe for KFC chicken on the blog but things have changed since then and deep frying no longer fits with where the blog is going so I removed it. This it the alleged original KFC recipe found in a family album by a nephew of the Colonel himself.
KFC have since said that it isn’t the original recipe but..would they say if it was? I’m not sure.
The spices and measurements in the recipe are to remixed with 2 cups plain flour and are listed below:
2/3 Tbsp Salt
1/2 Tbsp Thyme
1/2 Tbsp Basil
1/3 Tbsp Oregano
1 Tbsp Celery Salt
1 Tbsp black pepper
1 Tbsp dried Mustard
4 Tbsp Paprika
2 Tbsp Garlic Salt
1 Tbsp ground Ginger
3 Tbsp White Pepper
In my previous recipe, I blended the herbs to reflect the specs of herbs that can be seen in the KFC chicken. As is probably evident from the pics, this recipe was due on the website 1.5 years ago. Gosh..why am i not as organised as other bloggers? It’s actually because I decided to focus on something else this year and a lot of my time has gone there. I will update you all on that as soon as possible.
Back to the recipe. There is almost one cup of spice/herbs to 2 cups of flour in this recipe. The Chicago Tribune who published the secret recipe have concluded that the measurements are for tablespoons rather then teaspoons. I tried both and the tablespoon version is better.
I also used the Tribune buttermilk/egg marinade. I always make my own buttermilk because I always forget to buy it. Also, I used oil instead of butter in the pan to avoid changing the taste.
One more thing..the Tribune mentioned that a sprinkle of MSG would make the chicken taste exactly the same as the KFC recipe..but I don’t use MSG.
Lastly KFC uses different equipment, so even recreating this recipe including the MSG and deep frying won’t yield the same results texture wise as the original KFC version.

- 8 pieces Chicken Skin on or off
- 1 Egg
- 1 tbsp Oil
- 500 ml Milk mixed with 1.5 tbsp Lemon Juice (Set aside)
- 2 tbsp Oil
- 1 tbsp Butter
- 200 g Plain Flour
- 2/3 tbsp Salt
- 1/2 tbsp dried Thyme
- 1/2 tbsp dried Basil
- 1/3 tbsp dried Oregano
- 1 tbsp Celery Salt
- 1 tbsp Black Pepper
- 1 tbsp dried Mustard
- 4 tbsp Paprika
- 2 tbsp Garlic Salt
- 1 tbsp ground Ginger
- 3 tbsp White Pepper
Place buttermilk mix in a large bowl. Marinade the chicken in the mix for 1 hour.
Preheat oven to Gas Mark 3/175 degrees C.
Place the butter and oil on a large baking tray. Place in the oven for a few minutes until the butter is just melted. Remove and tip the tray to spread the oil and butter all over.
Drain the chicken of excess marinade using a colander.
Place flour and dry ingredients in a shallow plate and mix. Place half in a large ziplock bag. Transfer half the chicken into the ziplock bag, seal in air so it is puffed like a balloon, then shake to coat the chicken in the seasoning. Press through the bag so the coating is firmly stuck onto the chicken. Place the chicken onto the baking tray. Place the remaining coating into the ziplock bag and repeat with remaining chicken.
Spray with spray oil. Add the chicken to the baking tray and bake for 30 - 40 minutes, turning midway.
