Lemon and Sweet Chilli Chicken
Here I have a quick lemon and sweet chill chicken dish. It is sticky, tangy, caramelised and delicious. It is something you can just throw together if people are coming round. Like, it is very easy to make it and then just move on! Sounds good to me! Especially if you get the sides ready made. Just talking about this chicken makes me hungry. It is that good.
I am having a dopy day. Like really dopy. I keep dropping things and tripping and that kinda jazz. It’s not a great look. The other thing I keep doing is missing my parents calls. That is never a good idea. Especially because they are the ones who are abroad. I know I will be getting a telling off when they finally get hold of me.
Until then, I will enjoy looking at their pictures. My grandad is ill and seeing his pictures have been a little disheartening to be honest. I hate seeing him like that.
Both my kids are off sick today from school. My daughter was sick during the night too. They have just been quiet most of the day but now I feel like my son is getting better. He is doing some homework which seemed like an impossibility this morning.
Aah i think I hear the postman. Must be uncle Amazon. Not that I do those things. Ok, I do. I am bordering on obsessed. I LOVE Amazon. I could live on the site but one has to parent and work and of course earn. My husband thinks I need to lay off Amazon and step away but hello? It has everything a girl could need! Unfortunately, when the postman arrives I am never prepared. I be ruining around looking for something to cover my hair with. I do keep emergency head covers around, but they always disappear. He knows by now, bless him.
Anyway, I hope you enjoy this chicken!
- 1 chicken cleaned and cut into 8 pieces
- 4 garlic cloves crushed
- 1/2 inch ginger grated
- Zest and juice of a large lemon
- 1/2 tsp fish sauce
- 3 tbsp sweet chilli sauce
- 2 tbsp oil
- 1/2 cup water
- Combine the chicken with the garlic, ginger, lemon, fish sauce and sweet chilli sauce in a large bowl.
- Heat a wok with the oil over a high heat and add the chicken.
- Cook for 5 minutes, turn the chicken and cook for a further 5 minutes
- Turn the heat right down, add the water and cover the pan. Continue to cook for 20 - 25 minutes or until done.
