Hey who wouldn’t want a bed of chickpeas?! By the morning you would have made hummus with no blender required. YAY! Hmm might give it a try. Why am i thinking about hummus whilst fasting anyway? Instant mouth watering situation..I just made a note to make an authentic hummus video for the blog before i started writing this. AAAAH enough of the hummus chat. Anyway this Mediterranean Chicken and chickpea traybake that isn’t made in a tray is realllllly good.

I literally have so much to do today and have come across some great podcasts to listen to whilst I do so. I have just cranked the heating up too because I am sooooo cold. I actually feel like putting my shoes on. The weather has been going up and down and this is the year that I have finally realised that although I love the colours of Autumn, I love the warmth of Spring/Summer. Just not the humidity. I can leave that thanks. 

Here’s how this works.. Basically you season the chicken generously with herbs and spices. Then add your chickpeas, onions and lemons. Then you give everything a good mix and season. Then you roaast in the oven until the chicken is golden and the chickpeas are crispy.

Coming to then end of this post and just realised..I forget to add salt as an ingredient in my last recipe blog. So I’m about to go do that in case I forget!

Phew I am back. 

By the way this chicken can be served with whatever you want – a big crunchy salad, naan, pitta or roti and even pic will work. 

This is a simple, quick, healthy, easy, and delicious meal that is perfect for the busy mid week days. 

 

Mediterranean Chicken and Chickpea Traybake

Ingredients

  • 8 Chicken Thighs and Legs Skinless and Cleaned
  • 400 ml Yoghurt
  • Salt and Pepper
  • Juice 1 Lemon
  • 2 tsp Cumin Powder
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 1 tsp Smoked Paprika
  • 2 tsp Garlic Powder
  • 2 tbsp Olive Oil
  • 1 Red Onion Peeled and sliced finely
  • 1 400g tin Chickpeas

Instructions

  1. Marinade the chicken thighs and legs in the yoghurt, Salt and Pepper, Lemon, Cumin Powder, Thyme, Oregano, Smoked Paprika and Garlic Powder, for 30 minutes to 4 hours.

  2. Add the red onion slices to a tray, season and drizzle over the olive oil.

  3. Arrange the chicken and chickpeas over the onion slices.

  4. Preheat oven to Gas Mark 6, 200 degrees C. Bake uncovered for 40-45 minutes. Sprinkle over a little chopped parsley if you like!
