Mediterranean Chicken Tray Bake with Potatoes, Olives, Pepper and Feta

This is the perfect meal served with bread..you can use a gluten free variety of course like I do or serve it with this quinoa. It absolutely works. I just had it yesterday. Why am I trying so hard to prove it? LOLS. I promise it works. There I go again…but it really does. Ok..I will stop now.

Isn’t recipe writing weird? I usually sprinkle things straight from the bottle/jar/packet and now I have to write things down and be all approximate. If you ask an older person (talk about generalising) for a recipe they either say, oh its easy (because that is an accurate full explanation of the recipe apparently) or you get a list of ingredients and then you kind of work it out. Or at least thats what happens when I ask an older person for a recipe. 

Anyway this really is the perfect recipe for days when you don’t really want to cook, or are busy or tired. Flavour doesn’t have to be compromised because you are busy. 

Generally when I make chicken tray bakes I use bone in meat. I usually brown the chicken first and then put it in the oven. I think it really helps to seal in the flavour. In this recipe I have used chicken breast. I always worry about overcooking chicken breast so I am always extra careful to make sure that i don’t! I have seen some recipes that suggest baking chicken breast for 45 – 50 minutes..in my opinion that is one overcooked chicken breast but feel free to leave in longer if you prefer. 

Anyway, basically I love one tray chicken meals..mainly because like most people I am busy. Marinating the chicken in these recipes is so important and using herbs is also important. They pack in so much flavour and this easy and simple chicken tray bake is packed with the flavors of the Mediterranean. Winner winner, chicken dinner. It can also be made in advance and just cooked in the oven 40-50 minutes before dinner. The recipe will also work wonderfully with fish. Recipe coming soon but basically its the same apart from cooking time!

Ingredients

Chicken Marinade

  • 1 lb Chicken Breast Cut into 1 inch slices
  • 3 tbsp Olive Oil
  • 3 tbsp Red Wine Vinegar
  • 1 Lemon Juice Of
  • 4 cloves Garlic crushed
  • 1 tbsp Fresh Oregano chopped finely
  • 1 tbsp Fresh Thyme chopped finely
  • 1 tbsp Smoked Paprika
  • 1/2 tbsp Red Pepper Flakes
  • Salt and Pepper

Veg

  • 1 lb Potatoes Cut into 1 inch cubes
  • 1 large Red Pepper Cut into thick strips
  • 1 Red Onion Cut into slices
  • Salt and Pepper

Feta and Olives

  • 200 grams Feta Cut into large cubes
  • 60 grams Olives

Instructions

  1. Combine all the ingredients for the chicken marinade in a large bowl and put into the fridge for 45 minutes.

  2. Preheat oven to gas Mark 7/220 degrees and line a tray with foil.

  3. Add the veg to the tray and season. Bake for 25 minutes.

  4. Remove tray from the oven and add the feta and olives. Add the chicken to the same tray with any excess marinade. Bake for a further 20 minutes.
