One pot Jerk Chicken with Rice and Peas

You may recognise this dish from the blog. It was previously on the blog about 2 years ago but I couldn’t cope with the pictures and removed it. Not the best idea, I know. I first had jerk chicken with rice and peas 8 years ago as a newly wed. My husband used to have it regularly with one of his gym mates and he wanted me to taste it. She took me to one of his favourite caribbean restaurants and woah. I tasted it and I loved it. I very soon after made some at home. It was so so good. This version is all made in one pot which makes life sooooo easy. I like easy.

As with all my recipes, I did a lot of research when I first made jerk chicken. I made my own jerk seasoning with all the essential ingredients and I really got into it. Then I had a relative go to Jamaica and they brought me a shed load of jerk seasoning. I no longer have to make it. I just use that instead. Yay. 

Isn’t one pot cooking just the best? It is one of my favourite ways to cook because it really makes life so easy. I feel like there isn’t as much faffing going on. I also feel like the flavours can get really intense too because everything mixes together in one pot and is juicy and so delicious!!

This is the best kind of comfort food but it is actually really healthy and everyone loves it. Always a bonus! And…..  Only one pot to wash up afterwards! OK..I may have said that too many times already..

Ingredients

Chicken

  • 8 Chicken Thighs and Legs mixed cleaned, skinless
  • 1 tsp Salt

Rice

  • 2 tbsp Jerk Seasoning
  • 2 tbsp Oil
  • 1 Onion diced
  • 4 cloves Garlic crushed
  • 2 Bay Leaves
  • 350 g Rice 2 cups
  • 400g tin Kidney Beans drained
  • 400g tin Coconut Milk
  • 500 ml Chicken Stock
  • 2 tbsp Jerk Seasoning
  • Salt and Pepper

Instructions

  1. Preheat Oven to Gas Mark 4/180 C.

  2. Add the seasoning and salt to the chicken.

  3. Add oil to a pot over medium heat. Then add chicken. Cook 3 minutes each side. Remove from pan and set aside. 

  4. Add onions to same pan. Cook for 5 minutes before adding the garlic and bay leaf. Saute for 3 minutes.

  5. Add the rice and kidney beans and saute for a minute. 

  6. Stir in the Coconut milk, chicken stock,  jerk seasoning , salt and pepper. 

  7. Add chicken and bring to a boil. Place in the oven and cook , uncovered for 30- 35 minutes or until chicken is fully cooked.
