One tray Chicken, Brussel Sprouts, Carrots and Potatoes
I am yet to meet a person who doesn’t appreciate a one tray meal once in a while. That is why I have sooooo many one tray recipes coming up. This one tray chicken, brussel sprouts, carrots and potatoes is delicious. Don’t you love recipes that are hands off?
In this healthy one tray chicken recipe,marinaded chicken drumsticks are nestled into Brussels sprouts and shallots and roasted in one tray for an easy, healthy dinner. As the chicken roasts, the mustard, honey, paprika and garlic flavor the Brussels sprouts and shallots.
Of course it includes all my favourite flavours. I feel like marinading is really important for recipes like this because in my opinion the extra time is needed for the flavours to infuse
The best thing about this dish is that it contains no fancy ingredients. It is just a really easy fuss free meal with simple everyday and familiar ingredients that you will most likely have nocking around your pantry or counter top or fridge!
In terms of prep, there is very little of it required. Aside from chopping the vegetables. By the end you will have caramelised vegetables, moist chicken that is very slightly charred and most of all a hearty meal. This is a recipe that is great for meal prep. My current obsession!
To make this recipe with:
Bone in skin on thigh fillets: Bake for an extra 10 minutes. Make sure to bake skin down to being with and turn over when the cover is removed.
Boneless skinless thigh fillets: Add the chicken into the pan 20 minutes into the baking time. If you leave it in for the whole time per the recipe, they will overcook. The same method can be applied for chicken breast but the chicken will not be as juicy and moist.

- 8 Chicken Drumsticks
- 125 ml Lemon Juice
- 4 cloves Garlic crushed
- 1 tbsp Dijon Mustard heaped
- 2 tbsp Honey
- 2 tsp Paprika
- 1 tsp Oregano dried
- 1 tbsp Olive Oil
- Salt and Pepper
- 250 ml Chicken Stock
- 4 Medium Potatoes quartered
- 2 Red Onions quartered
- 1 large Carrot sliced into rounds
- 250 grams Brussel Sprouts cut in half
- 150 g Cherry Tomatoes halved
- Salt and Pepper
Combine the chicken and marinade ingredients in a ziplock bag or large bowl and set aside for 40 minutes or up to 24 hours.
Preheat oven to gas Mark 4/180 degrees C.
Add the chicken and marinade into a oven proof dish, then add the chicken stock, potatoes, sprouts, carrots and onion.
Cover with foil and bake for 20 minutes.
Remove foil, turn chicken, add tomatoes and sprinkle with paprika and salt and pepper.
Turn oven up to gas Mark 6/200 degrees C and bake for a further 25 - 35 minutes or until potatoes and chicken are cooked.
Baste chicken midway.
