Phirni - Delicious Indian Dessert made using a2 Milk™

Since I gave up milk a couple of months ago, I tried making this dessert with nut milks but somehow it just didn’t taste the same. So when I heard about a2 Milk™ which is easier to digest, I thought I would give it a try and it worked beautifully. Now I can indulge in my favourite dessert again! Woohoo!

Basically, If you like rice pudding you’ll like this. Phirni is a very simple and yummy rice pudding that is flavoured with warming spices and garnished with nuts. Usually made using ground white rice and traditionally served in little clay pots, this is a wonderfully creamy dessert loved by adults and children alike that is enhanced with sugar or honey, saffron, rose water (sometimes) and nuts. Phirni is usually cooled in the fridge to set into a thicker creamy consistency. I tend to omit the refined sugar and replace it with raw honey for its many benefits. I also always top mine off with some pistachio crumb to add both crunch and some much needed colour.

My favourite thing about this dessert is that it is very easy to put together and can be adapted to pretty much any flavour combination you can think of. This one is a classic saffron and cardamom flavour with pistachio nuts. I do sometimes swirl a little coulis into it. My favourite is passion fruit!

About that milk!   • 1/4 cup Basmati Rice
  • 1 litre a2 Milk™
  • Pinch Saffron strands
  • 1/2 tsp Ground Cardamom
  • 1-2 tbsp Honey
  • 2 tbsp Pistachios crushed


  1. Soak the rice in water for 30 minutes, then wash and drain. Grind in a blender. 

  2. Pour the milk into a medium sized pot over high heat and bring to the boil. 

  3. Add the ground rice and stir continuously. Continue to simmer for a few minutes.

  4. Stir in the honey and simmer for a further 5 minutes. 

  5. Add the cardamom powder and saffron. Mix well and divide between bowls. Top with Pistachio crumb.
