Porridge with Caramelised Pineapple and Toasted Coconut

As far as breakfasts go, this one is pretty awesome. Breakfast is my favourite meal of the day and despite never eating breakfast in my younger years, I somehow always associate it with being young and carefree. Strange.

I need me a brew and i just had one but its sooooooo cold. So yesterday I wrote a post about how i’m feeling a little bit low at the moment. Today I feel really good. Funny how that happens. I was thinking about how much I have to be grateful for (Cliche I know) and that got me thinking about why i was feeling so down. It kind of made me want to reconnect with all the areas of my life I have been neglecting. So i did just that yesterday and I feel so much happier. Self love and all that..

Anyway about this bowl, the one thing I wish I had added was a little passion fruit. However I forgot to add it, even though I had some sat right in front of my face at the time. Running theme of the week to be honest. I forgot to add a dressing to a salad the other day which would have been fine but I had sent it to my inlaws and the salad really makes it so much more amazing then it already is. I feel like saying summat like ‘i’d forget my head if it wasn’t screwed on.’ Oh look i just said it. 

Everyone was talking about the Vero app a couple of days ago and now everyone is avoiding it. Some bloggers did a little research on the background of the company and erm..just no. Here is some info. I so wanted to finally be one of the first ones! LOL I am always so behind with anything like that. Trust me to download an app and be one of the first million, for it to turn out to be a little bit dodge.

Aah never mind. I think I will stick to taking years to get to know an app before i download it! 

Porridge with Caramelised Pineapple and Toasted Coconut

Ingredients

Porridge

  • 100 grams Oats
  • 250 ml Water or Milk
  • Pinch Salt
  • 1 tbsp Honey or Maple Syrup

Topping

  • 1 tsp Butter
  • 4-5 pieces Pineapple Cubed
  • 1 tbsp Brown Sugar
  • 1 tbsp Desiccated Coconut

Instructions

Porridge

  1. Add the oats, milk/water and salt to a pan and heat over high heat for 5 - 8 minutes or until thickened and cooked. Stir in the honey/maple syrup.

Pineapple

  1. Add the sugar to a small plate and dip the pineapple in it, making sure it is coated evenly. Add 1 tsp butter to a pan over a low heat. Once melted add the pineapple. Cook for 2 minutes each side.

Coconut

  1. In a small dry pan, add the coconut and cook for 1 - 2 minutes stirring occasionally. 

Assembly

  1. Add the porridge to a bowl and top with the pineapple and desiccated coconut. 

Recipe Notes

You may need to add more water/milk to the pan of oats. It depends on the milk/oats. Sometimes i use up to 500ml.
