Quick and Easy Pickled Red Onions

This quick and easy pickled red onion recipe is something I have with a lot of my meals. Like so many meals. Basically because it is so delicious and so easy to put together. It is particularly awesome with indian meals and cheese sandwiches. *Drools all over the laptop.

The fasting is continuing here at my house and I have now been off sugar/dairy/caffeine/processed food/wheat for 3.5 days. Look i know it doesn’t seem like a lot but let me tell you, I feel like I am climbing up a very steep hill. I am insanely proud of the 3 days I have managed so far. (MA). Yet I know I have a very long day to go. Like basically, I am not even a fraction of the way through. 

So far symptoms have ranged from severe headaches and dizziness to a desperate urge to hit people or tell them to move faster. I don’t know if we all do these things, perhaps we do. You know when you are walking in the supermarket and someone just stops randomly right in front of you..or when you are walking and the whole footpath is clear and someone decides to walk really close to you, or when you are at a cashpoint or in any queue and someone stands REALLY close, or when you are on the bus with plenty of empty seats but someone decides to sit next to you and then you get into the most awkward smiley, shuffling situation. It’s worse when they start to talk and realise that I don’t have the social capacity to continue the conversation without sweating all over them and turning into the colour of a beetroot. Sigh. Social anxiety is not fun. 

Anyway, these onions are brilliant and you should really try them. 

Quick and Easy Pickled Red Onions


  • 1 large red onion
  • 4 small limes
  • 1 tsp salt


  1. Place the sliced onions in a heat proof bowl.
  2. Cover with boiling water.
  3. Let sit for 10 seconds and drain.
  4. Add lime juice and salt and set aside for
  5. For an easier version simply, add all the ingredients to a small bowl without the boiling water and set aside.
