This has to be one of my favourite soups ever. You know how i have previously mentioned that for me, drinking a smoothie can never feel like a meal. So meal replacement shakes are not for me and never will be. I felt the same about soup for years. Partly because at primary school we were force fed tomato soup. I will not name and shame my primary school..though maybe I should. Maybe it would be a public service of some sort. Please do not send your kids to……………..for they will be force fed really tangy tomato soup and they will hate tomato related things forever. Ok maybe not.

On tomato soup days, I only managed one or zero spoons of the stuff. I hated it and I believe that experience also paved the way to my dislike/phobia of tomato ketchup and red sauces (Go on..just laugh at me). Weirdly I don’t mind tomatoes or tomato chutney or tomato soup that I have made myself. Listen, everyone has some weird thing right?! This is mine. Please say you have a weird dislike/phobia? Please? Just pretend for me ok? Thanksssssss. Anyway the point being that now, I love soup! 

 Anyway guys! If you were celebrating, how was your Eid? Mine was amazing! We went up north to my mums and had an awesome time and then we left to come back home and had the usual Eid Barbecue with my inlaws. Basically we had the best of both worlds but we were so exhausted. The following morning, I couldn’t string a sentence together and by the evening I was forgetting what things were called. Anyway, I really don’t understand how my husband survives and functions on such little sleep. I have serious envy about that. I need twice the amount of sleep he does. According to Greek Medicine, my temperament requires more sleep then his but seriously, so much more? If I sleep at 1 am, I HAVE to have a nap. He doesn’t. Ok…well now you know about our sleeping habits, I must head off to my oversharers anonymous meeting. I hope you enjoy the rest of your day! 

Roast Garlic and Celeriac Soup

Prep Time: 5 minutes

Cook Time: 1 hour, 20 minutes

Total Time: 1 hour, 25 minutes

Yield: 3-4

Ingredients

  • 1 kg Celeriac peeled and diced
  • 1 whole Garlic bulb
  • 3 tbsp Olive Oil
  • 1.5 litre Vegetable Stock 1 tbsp Lemon Juice
  • Salt and Pepper
  • Pinch of Nigella Seeds

Instructions

  1. Preheat oven to 190/Gas Mark 5.
  2. Pop the Celeriac, garlic, salt and pepper in a large tray and massage with olive oil. Bake for 50 minutes.
  3. Set the garlic aside to cool. Once cooled, slice the top off and squeeze out the Garlic.
  4. Add all the ingredients to a large pot, bring to the boil and simmer for 10-15 minutes and blend using a stick blender.
  5. Sprinkle with nigella seeds.
