 Crunchy roasted spiced almonds with hints of chili and zesty lemon, cumin, coriander, garlic and ginger – these are unbelievably addictive! They are also quick and easy to make.

Say hello to my new favourite snack. To be honest, my mum used to make these all the time but I kinda forgot about them until we were sent some from one of my husbands friends. Also at this point, my son began to beg me to make them every day and vowed never to touch anything sweet again if i did. I didn’t make them every day..Just once! Like sweets (but not as bad of course), these should be eaten in moderation and trust me, that is so difficult.

These are easy to make and easy to eat that I feel almost like I should have been making them for years instead of just this week for the first time ever.

So here’s what you do:

First you add the nuts and spices to a bowl.

Then you toast them in the oven.  

Finally you let them cool and gobble them up.

In this weather, I drink loadsa cups of tea and go into snack mode. These being the my perfect go to snack.This easy recipe is a great healthy snack for adults and children. Unless of course your kids don’t like chilli or nuts for that matter. 

How do you feel about winter by the way? I have really mixed feelings. I like the cosy bit and also the family dinners but I struggle with getting motivated to go out on a long walk. I mean, my knees start to knock together as soon as i think about it but I don’t let that hold me back. I do get out and about and make a point of it. Just not for too long though!

Roasted Spiced Almonds

Crunchy roasted spiced almonds with hints of chili and zesty lemon, cumin, coriander, garlic and ginger – these are unbelievably addictive! They are also quick and easy to make.

Ingredients

  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Red Chilli Powder
  • 1 tsp Garlic Powder
  • 1/4 tsp Ground Ginger
  • 1 tbsp Lemon Juice
  • 1 tbsp Honey
  • 220 grams Almonds

Instructions

  1. Preheat oven to Gas Mark 4 and line a baking tray with baking paper.

  2. Mix all ingredients almonds in a medium bowl until well combined.

  3. Spread out evenly on baking tray in one layer and then bake for 12 - 15 minutes.

  4. Leave to cool on tray and then eat.

  5. Store in an air tight container.

Recipe Notes

These nuts are equally delicious with just the lemon, oil and salt too!
