Chicken shawarma Salad

I know i said i would have this chicken shawarma salad recipe up over the weekend, so i apologise that it is a little late. I promise that it is worth the wait. It is absolutely delicious. This may not be the most authentic shawarma recipe because it isn’t cooked on a rotisserie but i think it works well as a salad. The rotisserie method isn’t alway accessible. I have used all the flavours of a shawarma and baked it in the oven followed by a short blast under the grill. This recipe is for a salad, although of course you could eat it as a sandwich or naanwich ;).  If i was making a lamb version, i would use a griddle instead. I have made this with both chicken breast and thighs and would recommend you use thighs but if you are watching what you eat, then breast would be better and it also cooks quicker (Halve the time and keep an eye on it as it can dry out).

Hello! It feels like it has been a while since i did a recipe post. Currently i am trying not to become overwhelmed with all the things i gotta do!  Sometimes i think i think too much. That sentence proves i think too much.

So the day before yesterday, we heard of someone in our area (My mum’s area) who had passed away rather suddenly and it was a massive shock to the system. Although i didnt know him personally, i know people who are very shaken by his passing and who were very close to him. I was so used to seeing him around when i was at my mum’s, that it will be weird not to see him anymore. It just brought home the fact that we could lose anyone at any moment and we have to hold our loved ones close. It just makes me feel sad. 🙁

Hasn’t the weather been weird lately? Currently wondering if i can get out for some fresh air today.. Hmmm i just don’t trust the weather at the moment. I will go out thinking about how cool and breezy it is and come back sweating, red faced and gasping for water.

Back to the salad! The combination of flavours here makes this one of my favourite salads and i really think you should try it! It is A-ma-zing! I love garlic and this is super garlicky. Please adjust the garlic if it is too much for you!

Shawarma Salad

Ingredients

    Marinade
  • 2lb boneless chicken thighs, washed and cleaned
  • 1 lemon juiced
  • 6 garlic cloves crushed
  • 1/2 cup or 120 ml olive oil with 1 tbsp set aside
  • 2 tsp cumin powder
  • 1 tsp coriander powder
  • 2 tbsp smoked paprika
  • 1 tsp ground cinnamon
  • 1 tsp cayenne pepper
  • 1 tsp oregano
  • 2 tsp sumac
  • 1/4 tsp ground ginger
  • 1 tsp salt
  • 2 tsp black pepper
  • 2 large red onions chopped into quarters
  • Cabbage Salad
  • 1/4 cabbage shredded
  • 4 garlic cloves crushed (Adjust to 2 if you don't like too much garlic)
  • 5 baby plum tomatoes diced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp parsley chopped finely
  • 2 tbsp fresh thyme leaves
  • Salt to taste
  • Salad
  • 1/2 cucumber, middle scooped out with teaspoon, in 1/4 inch slices
  • 10 baby plum tomatoes chopped in half
  • 1/2 red onion sliced thinly
  • 1 tsp fresh thyme leaves
  • 1 tbsp olive oil
  • Red Onion Salad
  • 1 red onion sliced finely
  • 1 lime juiced
  • 1 tsp smoked paprika
  • 1 tsp sumac
  • Pinch of salt
  • Tahini Sauce
  • 1 tbsp lemon juice
  • 2 tbsp tahini
  • 2 cloves crushed garlic
  • 1 tbsp chopped fresh parsley
  • Yoghurt Sauce
  • 1/2 cup or 120 ml mayonnaise
  • 2 tbsp yoghurt
  • 1tsp lemon juice
  • 1 tbsp olive oil
  • 4 cloves garlic crushed
  • Salt to taste

Instructions

    Chicken
  1. Combine all the ingredients except the onions for the marinade in a large bowl and marinade for at least 8 hours or preferably overnight.
  2. Preheat oven to gas mark 7.
  3. Grease a baking tray with the tbsp of olive oil.
  4. Spread the chicken onto the tray and scatter the onions around the chicken.
  5. Bake in the oven for 35 - 40 minutes until the chicken is starting to crisp at the edges. Start to make the salads.
  6. Remove from the oven and pop under the grill on high heat for 3-4 minutes. Keep an eye on it though. Grills vary quite a bit!
  7. Allow to cool and cut into pieces. I sometimes chop into bite size and sometimes into strips.
  8. Cabbage Salad
  9. Combine all the ingredients for the salad and set aside.

  12. Red onion salad
  13. Combine all the ingredients for the red onion salad and set aside.
  14. Tahini Sauce
  15. Combine all the ingredients for the tahini sauce. Add more water to dilute if it is too thick.
  16. Yoghurt sauce
  17. Combine all the ingredients for the sauce and set aside.
  18. Assemble
  19. Arrange the salad amongst 6 plates.
  20. Add the cabbage salad and red onion salad next to it and the chicken on top of the cabbage.
  21. Top the chicken with the tahini and yoghurt sauce.
