Shredded Chicken Enchiladas

These Chicken Enchiladas are a staple in our house because everyone loves them. They are also great for using up leftover chicken. So when I make 2 at a time like in this recipe here, I usually use the other one to make something like these shredded chicken enchiladas or stuffed naan or quesadillas. 

The base flavor of these Shredded Chicken Enchiladas is made up of an enchilada lime and jalapeño sauce which i just love! I sometimes make the sauce ahead and keep it in the freezer. I also batch cook this recipe and freeze for busy days/weeks. Seriously at the moment I seem to be having a lot of those. Maryam is off school again today which is weird. she was off on friday with a fever and then seemed better that evening. Then Saturday the fever was back at full force. Sunday it calmed down and this morning it was back. She also had a massive nose bleed and I mean massive. We are used to nose bleeds because my son often has them but this was something else. I will be upping her Vitamin C intake. I do think she has an infection and will be off to the docs today too.

Shredded chicken mixed with cheese, sour cream, and some vegetables (I love corn and jalapeños). This then becomes the most amazing melted filling and is just delicious. 

I am actually thinking of making these for a get together I have coming soon. I think two large trays should do it. I know they will be a hit. Firstly because who doesn’t love enchiladas? Secondly because Enchiladas are mine and many other peoples favourite kind of comfort food. Thirdly because they are saucy, cheesy, creamy and oh so flavoursome.  

Each bite of these delicious shredded chicken enchiladas is covered in a rich, creamy, jalapeno lime sauce that sings with spices and is unbelievably good.  This is a quick dish to make and it is so drool worthy.

Ingredients

Filling and Topping

  • 2 tbsp Oil
  • 1 Onion diced
  • 250 grams Cooked Shredded Chicken
  • 2 tbsp Jalapeños diced
  • 1 tbsp Lime Juice
  • 2 tbsp Sweetcorn
  • 375 grams Cheddar Cheese
  • 230 grams Sour Cream or Crème Fraîche
  • 8 large Tortillas Flour

Sauce

  • 3 tbsp Oil
  • 2 tbsp Plain Flour
  • 4 cloves Garlic crushed
  • 3 tbsp Red Chilli Powder
  • 250 ml Plum Tomatoes Pureed
  • 250 ml Chicken or Veg Stock
  • 1/3 tsp Onion Powder
  • 1 tbsp Pickled Jalapeños diced
  • 1/2 Lime Juiced
  • 2 tsp Cumin
  • 1 tsp Mixed Dried Herbs
  • 1/4 tsp Salt

Instructions

  1. Preheat oven to Gas Mark 4, 180 degrees.

Filling and Topping

  1. Heat the oil and add the onion. Cook for 4 - 5 minutes until light golden brown, then stir in the chicken. Stir for 2-3 minutes. Remove from heat.

  2. In a small bowl combine the chicken mixture, 1/2 the cheese, the sour cream and lime juice. 

  3. Stir in the jalapeños and corn. Cook for 2 minutes and remove from the heat.

Sauce

  1. Heat the oil in a medium sized pan over medium heat. Stir in the flour, chilli and garlic and combine together.

  2. Pour in the tomatoes and stock, then add the onion powder, jalapeños, lime, cumin, herbs and salt. Bring to the boil, then simmer for 8 - 10 minutes. 

Assemble

  1. Dip a tortilla in the sauce, then add some of the filling. Roll tight and put into the baking dish seam down. Repeat with other tortillas.

  2. Pour over the remaining sauce and add the cheese mixture. Bake for 25 minutes.
