Simple Roasted Root Vegetables

I have a thing about vegetables. I hate most boiled vegetables. I think most (not all) vegetables taste so much better after they have been into the oven and these are a perfect example of that. Think boiled carrot versus roast carrot. I rest my case.

Talking about carrots, did you watch Masterchef?! Did that guy (I’m really bad with names) totally smash it and make the most delicious dish that had the judges grinning like cheshire cats using a carrot as the star of the show?! He made a carrot steak. Yes yes there was ricotta involved because arm you need something with it but it looked and sounded delicious. Carrots are used as a side dish a lot and I think it is actually nicer to have them with the other vegetables here because it really works.

Parsnips for example are a carrots best friend. I regularly substitute parsnips for carrots in carrot cake. I prefer them to carrots because they are so much sweeter and so filling. The texture is different too so I find that they are easier to cook and eat. Obviously carrots are better raw though! I also use turnips. They taste slightly peppery almost like rocket weirdly. 

This is a really healthy side dish and an easy addition to daily meals. Its also a great way to get vegetables into the kids. Especially if they are fussy like my son is. 

I have another dish coming up with other vegetables that I love to cook together.  That involves ora on the cob, carrots, potatoes, sweet potatoes, butternut squash, red onions etc etc..Just talking about it is making my mouth water! For now though, this is an awesome veg side and I know you will love it.

P.s. You can totally skip the honey stage. You can also substitute it for maple syrup if you are vegan.

Simple Roasted Root Vegetables

Prep Time 15 minutes
Cook Time 1 hour 10 minutes
Total Time 1 hour 25 minutes

Ingredients

  • 4 Carrots washed, peeled and cut into 1.5 inch chunks
  • 4 Parsnips washed, peeled and cut into 1.5 inch chunks
  • 2 small Turnips washed, peeled and cut into 1.5 inch chunks
  • 1 small Celeriac washed, peeled and cut into 1.5 inch chunks
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 3 cloves Garlic crushed
  • 1 tbsp Honey

Instructions

  1. Preheat oven to Gas Mark 6, 200C/180C fan. 

  2. Combine all the veg with the oil and everything else apart from the honey on a large oven tray with sides. Roast in the oven for 50 minutes.

  3. Remove the tray from the oven, drizzle over the honey and return to the oven for 15 - 25 mins more until golden
