These Sweet Potato Latkes are beautiful and oh so delicious. I took this picture over a year ago and I thought it was amazing at the time. Now? Not so much. I will update the pic asap but can I just say, these are absolutely delicious and also the only way i can convince the men in my family to eat sweet potatoes.
They are so easy to make and work really well on party platters too btw..mini versions of course. I love the sweet smoky flavour and the crunchy bits around the edges. So so good! Psst…They are perfect served with sour cream and chives.
To make these healthier, we skip the flour and therefore there are no white onions in this version. Which means you are reliant on herbs and spices to make up the flavour. Luckily, I like a bit of herb and spice.
Here is a little step by step to demonstrate how easy these sweet potato latkes are to make:
- Grate the potatoes into a large bowl
- Add the remaining ingredients and mix.
- Heat a pan with a little oil.
- Add about 2 heaped table spoons worth of the mixture to the pan and flatten slightly.
- Cook for 3 minutes each side.
- Top with sour cream on the top of each latke and sprinkle with fresh chives.
Aaaaand..Bob’s your uncle.
By the way, can you actually believe we are already into the middle of Ramadan? Like many others, I really hate it when Ramadan is over. These Sweet Potato Latkes are a really good alternative to the deep fried, pakoras, samosas and other fried mini delights (oops..i just dribbled a bit).
Sweet Potato Latkes
Sweet Potato Latkes - Sweet Potato Latkes made with few ingredients and spices. These make a delicious snack, starter or lunch if paired with a salad.
- 1 large Sweet Potato Peeled
- 3 Spring Onions Chopped finely
- 4 cloves Garlic Crushed
- 2 large Eggs beaten
- 1/2 tsp Cumin Powder
- 1 tsp Smoked Paprika
- 1/4 tsp Cayenne Pepper
- 1/2 tsp Dried Thyme
- 1/2 tsp Salt and Pepper
Grate the Sweet Potato into a medium sized bowl.
Add the spring onion, garlic, ,eggs, cumin, paprika, cayenne,theme and salt and pepper. Mix well to combine.
Heat a large non stick pan over medium/low heat. Once hot and 1 tsp of oil and swirl the pan to coat.
Use a tablespoon to get some mixture (roughly 2 heaped tablespoons worth) and gently place it in the pan, pressing down slightly with the back of the spoon. Add up to 3 more.
Cook for 3 minutes or until golden (press down with a spatula slightly as you cook them), then flip and cook for a further 3 minutes.
